I prefer to cook my ribs at 240-250 degrees. I understand that others prefer lower temperatures. I am interested in opinions/comments regarding rib cooking temps for baby back ribs.
my experience is that if the ribs aren't really thick, you can get away w/ the higher temps... which is good when you don't have all the time. But treating em like a brisket and making em so tender you could run a spoon thru the bones (almost) :wink: is always good

I have cooked ribs at a higher temp like the 240-250 you were talking about with great success. Even though you talk about baby back ribs i usually cook pork spareribs, just my preference and costs are much less. I just find that a lower slower cook is really super. But i have cooked ribs at temps up to almost 300 when people are waiting to eat and i am speeding up the process, you just don't get the great smoke flavor. Use a great rub and it works. I'm getting hungery.

I've always said that the slower you cook meat, the better it will be. Personally tho, my grill won't let me get temps down in the 200-220 range...it simply runs too hot. so i do the next best thing...i cook the ribs on indirect heat on one side of the grill with a pan of water covering the entire grilling surface. I sometimes add beer to the water trough.
The biggest thing with ribs is trimming them right from the get go. I saw some pics one time someplace on how to trim. but you can figure that part out, just make sure to get the membrane off the inside surface of the ribs. this will keep your picnic'ers from chewing grisle all afternoon.
