After reading the post on Smoked Bologna, here's a tip for making some good beef jerky. Took an eye of round, smoked it for about 4 hours on the pit. Then pulled it off, sliced it real thin, heavily salted and peppered the slices and then stuck them in my food dehydrator. Great jerky, lasted all of one day after the kids got hold of it. Pretty expensive but well worth the taste.
