Someone recommended to me recently to split the point from the flat about 2/3 of the way through my cooking time. Reason behind this is to prevent overcooking & dryng out the flat which is much thinner than the point and requires less cooking time. Makes sense to me ...has anyone else out there tryed this method ? I thought I made a good brisket but come to think of it, the flat does dry out a bit. :(

Have not ever tried that technique out. I love the point being attached during the entire cooking process as there are some great fats in there that I believe add to the flat under the point during cooking. This is my theory anyway. I know there are folks out there that cook only flats. Lets see who we can get to answer this question. If you wrap the brisket as I do I have never had a problem with the flat drying out. My thoughts on this.

Bill, I think I've been smoking briskets about as long a you have and I agree. Regarding splitting a brisket in midstream cooking, I don't think it's a good idea. First it disrupts the whole synergy of heat, smoke and timing. Second it will pull out more juice and flavor and risk drying out the flat. Third, it adds a little more work to the overall process.
Regarding the crown vs. flat cooking times, what we do in mid stream will just shift the briskets in the smoking chamber, typically putting the crowns pointed towards the fire box / hot side of the chamber. Seems to work for us on our pit.
I do however agree that for every Pitmaster out there, there's a slightly different variation on how we all achieve the results we want. Could be foil, be a mop sauce, different rub, charcoal vs lump, logs vs. chunks, oak vs. hickory, 12 hours vs. 18 hours. It's these differences that's turned our great hobby into a sport and fuels the basis of friendly competition.
Regarding Memorial Day, it's even more important to remember and celebrate those who have fallen especially now with our own security at risk. There's way too much we take for granted until you sit and remember the impact of 9/11.
Could go on, however, I've got to hit the stores - doing a party on Monday for 60, plus a mail order package for a 100 in New York.
