Here's something fun we did. Over Memorial Day did a big Smokefest here at the House. Along with feeding some friends and neighbors, smoked up 60 pounds of briskets to be shipped to Westport, Conn. for a relatives party for her daughter.

Shipped everything up on Wednesday via FEDEX, they recieved it first thing Thursday. I sent them specific directions on how to reheat and serve. Today is the day of their party whereby they are serving Texas style, Slow Smoked Briskets to 50 upscale, New Yorkers who have no idea what good BBQ is. By the way the party is down the street from Martha Stewarts house.

Waiting on feedback this afternoon. I couldn't be there, however my parents, sister and nephew (all of whom are from Texas and are part of our team) are there to get pictures, comments, fly the Texas flag and call me as soon as they get the chance.

Will let y'all know how it goes.

Way to go Lee. Sending that great Texas smoked brisket to NY so they can see and taste some real Texas brisket. Let us hear how that went. Be interested in the FedEX deal also.

Let everyone know how they too can send something to another city for them to try.

Hi Bill

Results from New York were huge. Nothing left, great comments and amazement. Could be the start of something here.

Regarding shipping logistics.

For Prep:
What we did was (after everything was smoked up) - went ahead and sliced the brisket flats and turned the crown ends into chopped beef even added a very small amount of sauce to the chopped beef. Took everything and vacumn packed into food saver bags and then froze it.

For Shipping:
Went to Academy, found a 36qt Igloo on sale for $13.99On last Wednesday, packed the igloo with the frozen beef, some ice bags (did not need to use dry ice) and sealed it with Duct Tape and headed off to the Conroe FEDEX terminal.

Cost to ship overnight priority / first morning delivery was $106. However the clerk did run some rates for me indicating aftenoon delivery would be $93.00 and if we wanted 2nd day it would drop to $76.00. The total weight for our shipment was 35 pounds. Luckily my cousin had given me their FEDEX Acct. Number to bill the shipping against.

Also sent up two bottles of Cattlemans sauce from Randalls, with specific instructions on how to heat the meat, serve and make sure the sauce was served on the side. Obviously the shipping variable is the most expensive link. Since this was not a commercial venture, we donated our time, the meat and igloo. If we wanted to figure our cost margins - we would've shifted to dry ice and go longer on the shipping times to save some money.


Great fun anyway you look at it. Stage has been set for us to pick up a few 'long distance catering' jobs. Turns out the original 50 people had swelled to 85 hungry adults. Quantity was enough for everyone to have one good helping and nibble on seconds.

Very interested in anyone out there who's got a similar experience.

Thanks for all the info. Yeah seems like the world is at your finger tips with this venture. Not as easy as shipping out books though. But the results were fantastic it appears and spreading that Texas Beef Brisket around is great.

Always heard of shipping brisket or ribs around and was just not sure of the logistics it required but now we know.
