View Full Version : My first brisket .....

Hello all. I am a newbie to the forum and to cooking brisket. I have wanted to cook brisket for years but never made the time or purchased the equipment. I do love to grill steaks on my Weber Gas Grille, but when I have an urge to eat brisket I have to go to some BBQ place and make do with what other people prepare. Well now things have changed.

I had a design for a smoker that I wanted, and last year I went to a friend that has built a few pits and construction was started. There was no big rush and when you get cheap labor you have to work on their time schedule, but that aside I picked up my new smoker last week.

During the construction phase I pestered everyone I knew to get smoking tips. I was overloaded with information and tips. Some I have my doubts about. It was during this quest for knowledge I found TexasBBQRub's website. Well I have read every post and all the pages at least a dozen times and decided I would start here. I purchased some Rub, which was shipped very promptly, then waited for a Saurday off to start my brisket adventure. I purchased my meat (brisket, spare ribs, and some chicken for luck) and waited for the day to approach.

Today it started. Aug 2, 2003. No sleeping late. Up at 5 am to start up smoker with some well seasoned Hickory. At 5:45 am applied TexasBBQRub per directions and at 6:30 put the brisket in the smoker at a pleasant 225 degrees. This has since settled down to a nice 210 to 215 temp. All looks well.

Since I had a pretty good mess in the kitchen, I went ahead and prepared the spareribs with TexasBBRub along with the chicken and into the fridge they went. Cleaned up the mess I made (rub and worcestishire sause everywhere) and rushed to the forum to list this post.

I will be sure to post a follow up to let everyone know how the rest of the cooking went and of course how the brisket turned out. From the looks of things all sytems are go!

Would love to hear from anyone who wants to chat or offer advise.

Hey Craig:
I read and posted to your other post about the outcome of your cook. Pretty darn good job for a new smoker and your first brisket, you are now on the way. You can see what I posted over there and I know some of those tips will help you out.

I have a tip for you on the kitchen mess. What I usually do when cooking at home is to cover the area you are going to do your rubbing on with either aluminum foil or a plastic trash bag. Then after all of the rubbing is done all you have to do is fold up the plastic or aluminum and throw that mess away. It has saved me some time with the clean up so try that out.

I have never cooked chicken before. Can anyone teach me how. Offer tips. Or tell me who to stay away from when they offer help. Or who is the best chicken smoker ....

I need all the help I can get ...

In fact, when Texas Chickens feel threatened, they go to your house for protection. They know they be safe there... Only way a chicken is gonna die at the Texana Ranch is old age... (or freezer burn) :lol:

Welcome Tex- If you doing some ribs along with that brisket Id recommend you order some Texaspepperjelly to make a finishing sauce with, Ive tried it and its good :!: good luck on the brisket, after you use that wood burning, charcoal snortin pit it will make you wanta throw rocks at that gas grill......

I think that since I used the same name the files got crossed indexed, and the data subjucated and dialated, and I got some of his info.

I just saw this myself. It says I am a moderator. This could cause some confusion. Also I can not get my avatar to show. Who do I talk to about this?

Well if I were a bettin man, my money would be on 3 cooks, Bob n Humble, Bigwheel, and Big Dave.. They know how to do chicken right,

I just picked up a nice one from Sam's, fix'in to go unload it and test it out. Ain't Qin till tomorrow, but I like to start early :D
29 bucks and looks like a nice recliner type.
