Last night i was watching the wars of bbq on the travel channal. They said memphis was the best place to get ribs. No don't shoot me i am just telling you what i saw on tv. My question is this. Do you like your briscket sliced or chopped. Do you like your ribs wet or dry. Texas came in a close second. This was not contest it was bbq restrants. did any one else see this.

Well as for me I like my brisket sliced with the point and and ends
chopped for sandwiches. Ribs well with Bill's rub you don't need sauce
so I guess it would be dry for me.

Well....now it's my turn.
I like all my meat without sauce. I do not understand how anyone can taste the meat with all the sauce that some places put on it. Of course some meat is so poorly cooked hiding it with sauce is probably a good thing :shock:
A good sauce is great for a little dipping, but thats all I want sauce for.
My like my brisket sliced and my ribs to pull easily from the bone.

I saw that show yesterday afternoon. I have never cooked pork, but after seeing that show, I am going to have to try and cook one of those the next time around.
I'm starting to get hungry again.

Ribs -Dry.....Brisket-Sliced. No sauce here either. Why the hell do I want to spend 12 hours smoking something so I can cover it up with a sauce that took me an hour to make! That travel channel show was good, but the contest to see which region's Cue was best? That was a joke. Those cowpokes didn't even know what the pulled pork was! Hell, those guys were from Tejas and they didn't even seem real keen on brisket!

If it's the same show I've seen before then it's the 4 regions of BBQ. Texas, Memphis, Kansas City and North Carolina. People in California were the judges. Memphis, Texas, Kansas City and Carolina in the order they finished
I like my ribs both ways. Wet and dry but not the Memphis way of dry ribs where they cover the ribs in rub after they pull em off the smoker.
I don't think the judges were used to Carolina pulled pork with vinegar sauce. I used to travel to the research triangle in N Carolina on business 4-5 times a year and would always drive over to Lexington to eat at Wayne (Honey) Monk's BBQ joint. Some of the best Q I've ever had in my life

Like my brisket chopped from the Deckle (The point). Sauce is an option but not needed if you've cooked a good brisket.

WhAt dO yA eXpEcT fOr jUdGeS fRoM cAlIfOrNiA! I like my ribs either way as long as they are good and i like brisket in my Belly dont matter how it gits there :lol: :lol: :lol: :P
