Just ate some delicious chicken I slow cooked in my propane smoker.

I Spatch****ed :?: the critter, put some cookin oil on it and then put on the rub. Put it in the smoker, filled the wood box, and turned on the fire.

Had to go coach a baseball practice for a couple hours, came back to cold chicken. Tank ran out of gas :cry: Well, I had another tank on the BBQ grill, so just hooked it up and had to eat a couple hours later than expected. But the chicken was sure moist and tasty.

Good deal JJ....is Spatch****ed when it's stuffed with other meats or dressin?...heard the term once er twicet, but not up ta snuff rite now on what it really is....clue me in.....guess what?....yer waaaaaay ahead of Texana in the chicken cookin department :o ....the fact that ya got the chicken on the grill makes ya years ahead of his chicken cookin prowess :P :P ....Buckeye

Spatch****ing a chicken is the same as butterflying... just remove the backbone, spread it flat, then remove the breastbone.

Some say a spatch****ed chicken cooks more evenly than a whole bird.

BBQ is right,

You take a whole chicken, (if you can catch it :lol: :P ) and with poultry shears cut along one side of the backbone and then the other side to remove it. Then turn the bird over and flatten it out, clipping the breast bone if necessary.

Put your rub or seasoning on it, and lay it skin side down in the smoker and start cookin.
