Just moved from there. Gotta go with Tomb thumb. Espaecailly the one i spoke of eirlier. N. Macarthur and belt line, the butcher is named wayne. I have never found better meat or better service. now if your going strictly bang for your buck sams is probably one of the best. Still i would personally and did for years pay a little bit more for extraslike scrap fat, expertly cut meat and meat that tasted better than any ive found. man i miss it. Man thewhole thing was so great that i became great freinds with the butcher and that just got it hooked up more. I guess i really apreciate a good butcher? i dont know.

Kerneys feed store in Mesquite sells oak, mesquite and one or two other woods. It may be a little far for some of ya'll though. I buy a little oak from them every now and then. While bird hunting in west Texas last September I bought a cord of mesquite from a local wood vendor. It's alot less expensive out there. Gonna get some this year too.{ birds and wood}

Man you guys have it too good! If we can even find a packer cut up here, it is in the $4.00/lb + range. Buying wood is like a treasure hunt. If you can find somebody who has the sense to keep it separated, you've got a goldmine! I go around to the local orchards, and see if they'll sell me their cuttings. Most folks who deal in firewood sell "mixed hardwood." usually, it'll be oak, maple, beech, maybe some cherry if your real lucky, all mixed together. They actualy use it to heat their houses here. (for those of you in the south, that is what you do when it gets below 32 degrees!) once you've got some sources, you guard them like trade secrets. I had a couple of guys over this weekend that I met on the Klose site (Buckeye, one of em was your arch nemisis Kevin T) and one of em asked where I got the apple? I changed the subject real quick. We can get some things better 'n you guys though. If you like fishing, we've got some of the best smallmouth, yellow perch, and walleye around! I wouln't smoke em though!-woodman

Woodman,
You are correct. In a lot of ways we are very lucky. The only thing that make things down here perfect would be the easy availabliity of some fruit woods such as apple and cherry.
By they way....you jgo by DallasPacker on the other board?
If so, nice pics.

Tex, No, I'm the ever present Dave H. Dallas was the other guy who came over Saturday. There's a photo posted over there. We had about 6 racks of ribs and about a case of beer (mostly me cause I didn't have to drive.) We've actually got the makings of a good little group up here in Northeastern Oh., Western NY and Western PA, but we like it informal so nobody has to work too hard. Just buddies hangin out drinking and cooking.

That sounds like a good deal. I saw the pics. The ribs looked wonderful.
Nice pit you got yourself. Klose builds a nice pit.
It is always nice to have a group that can get to together like the three of you did. From what I read on the board there are several more up there around you. If yall ever get it together it should be a lot of fun.
You had it easy, you did not have to drive.
We are lucky around here also. There are several of us that can get together and cook. Mostly we tell lies and drink beer, but the important thing is we all have a great time.
Maybe sometime I will jump in and chat over on the Klose board. I wont get shot will I?

Tex, There's a couple of jerks that lurk over there and like to get personal. Alot of it happens off-line via e-mail. Some think it's coming from you guys over here. I don't . You guys all seem up and up. We had this discussin Saturday amongst ourselves. Just call me the peacemaker. I'm a regular Nobel Prize Winner! . We rib each other alot. I know that there was a spirited conversation tween Kevin and Buckeye awhile back. That's cool. If ya can't disagree with one another, then what are we fighting in Iraq for?
If you go over there and someone gives you a hard time? I'll stick up for ya! Us Klose guys are pretty loyal, but we're not stupid! Hell, in the final analysis, a hole in the ground'll make BBQ just as good as any $15,000 pit! I have found both of these forums to be invaluable as to learning the ropes

Woodman:
Thanks for the heads up. I have seen the stuff that goofball is doing over there and maybe I am to loyal, but I do not really think it anyone over here. As for as that goes I dont think it is anyone at Gator's forum either. I say that because while Gators site is informative and a big help for his customers, his board does not have the depth of chatting that we have here or at David'd board.
Yea there are alot of Gator fans over here, but they all are smart enough to agree with what you just said. Dig a hole in the ground, and you can still cook great food. Look at Paul Taylor over here. That boy has his little leaking, smoking azz brinkman and he is a BBQ Nut. " Go Get Em Paul". On top of that you wont meet a nicer person.
I know Gator and Klose both build great pits. In the end it comes down what you can spend and who you like doing business with.
Thanks for the offer to speak up and play peacemaker. If I get backed into a corner I might yell for help. Lord knows I cant depend on ole Buckeye to help out.
Talk to you sometime over on the other board.

Big Rob, You"re the "man with the plan"! Looky here,If you have an Acadamy sporting goods store somewhere in the DFW area, you may wanna see about getting your mesquite wood that way. It comes in huge bags.It also comes in pecan & hickory too. Over in Shreveport, they sell for $10.00 a bag (whatever wood you want). 1 bag usually does the trick for me. I am cooking on a $150.00 Wally World special Brinkmann SNP leaking azz pit.I usually do a 12-14 hour cook on the pit & 1 baq does the trick for me. I just don't use charcoal in the firebox.I crank it up with mesquite chunks & then the rest is the logs. Then again, I don't know what exactly that you"re cooking on either. So that plays a factor too.If you will, please e-mail me & lemme know what you"re cooking on & we can go from there. If you have a pit like mine(NB, Brinkmann,Tejas,OKJ, or whatever it is) don't worry about burning wood in the firebox. I do in mine all of the time & it don't hurt nothing, All I can say is is "Go for it & God love ya"Knock yourself out buddy Damn, I just LOVE sharing all of this newfound knowledge with good folk. It makes me feel good :D BTW, Texana,I do thank ya for the good words. I do resemble that.I know when I kick off. I wanna Gatorpit Predator pic put on my headstone :) Holler @ me Big Rob & we will put our minds together. :)

Hey Will, I'm just a few hours north of you (just south of Norman OK). I saw an old ad on this board for a guy wanting to sell a bunch of Hickory. Did you guys buy it all? I sent him an email about maybe buying a couple of ricks but haven't heard back. I thought a few ricks of hickory would be good as a main wood supply and then I can try and get some pecan and mesquite to use when I want to do something a little different.
Also, i had a guy offer me a rick of hickory but he priced it at double the price of a rick of oak... I think he was trying to get rich off of one deal. Hickory might be a little more expensive but it's not twice the price is it? I might be interested in running down to Denton and getting some wood from the place you mentioned some time.
later
