I have a problem. Up here in Canada. We do not have the woods you all have down south. Would the bags of wood chips work, to get my different smoke that i want. I would have to use lump charcoal and then add the wood chips right. Colin

You can use the wood chips if that's what you have. One way to get more smoke from them before they just burn up is to soak them (I don't soak the chunks, no need, but the chips can use it) then wrap them in foil. Poke some holes in the foil for the smoke to escape.

Farmboy can you get your hands on some apple wood if so

it's great for smoking just about anything.

going with BBQ in FL. if you cant get large suppliews of wood the wood chip method wil work. it's not quite like having an all wood fire but you will get some smoke flavor. Just like was said soak'em then foil 'em. chips burn up so fast that they are almost not worth the $$ unless your in a fix, sounds like your there. Griwing up i used to use that method a lot
