Some friends of mine want to learn how to make beef jerky anybody got a good recipe or know any sites that any tips on beef jerky? I also told them about this site so I think we might see a few new members popping up.

Although this recipe is geared toward the Wimpy Smoking Machine, I'm sure you can adapt it to whatever you're cooking with.

Jerky is one of the easiest things to make on a smoker, i think so anyway. I have made prolly 20 pounds of it. I start with a lean cut of top sirloin about an inch thick. I slice it into 1/4 inch thick slices, cut against the grain and usually at an angle to make wider slices. Soak the slices in 1 cup soy sauce, 1/2 cup worstershire sauce, and garlic and onion powder. smoke over hickory for about an hour or until they just start to turn dark red. Walmart has these aluminium mesh grates that work perfect for jerky. I also like to sprinkle the slices with garlic pepper, or plain pepper after i have laid them on the grate. The pepper sticks to them and gives them a kick. Do not soak them more than an hour or you will get salt overload. Make a bunch, it keeps for a long time.
