I got a question that I need to throw around to anybody/everybody. Has anyone ever slow smoked stuffed bell peppers before. If you did, what all did you use in your stuffing & how did they turn out? I got some peppers that I gotta hurry up & cook or they will go bad. Any ideas anyone? :?: :)

Paul....haven't cooked a stuffed pepper in ages, so I can't ritely tell ya what was in it cept fer sum seasoned ground beef, onions, diced tomatoes, rice(cooked) & cheese...... don't know nothin bout slow smokin one...sorry.....I got a few of em' waitin ta go bad too, so I'll try an see how mine come out slow smoked...hopefully tonite...Buckeye

Hey Buckeye, I am thinking that I may just do that while I am smoking this 9.5 lb brisket tomorrow. I can just stuff'em & try smoking them. I have thought about wrapping a piece of bacon around them or maybe cut the bacon in 1/2 & put both pieces on top w/a toothpick while they are coooking & try them thataway :) .What would you think? Yay or nay? :?: If anybody else has any ideas, please jump on in here. That is what this is here for.Go for it Ya"ll :) 8) :D

Go fer it....I had the same idea with the bacon wrappin..sorta like an ABT cept a bell pepper instead of a jalapeneey :wink: ...ana bit larger too..... the wife rescued those peppers an put em in a salad....maybe next go round I'll try...let me know how yours tern out...Buckeye

Hey Paul.... I couldn't wait ta give that smoked stuffed pepper thing a try, so I went out an bought a couple peppers ta put on with my eye round. I wasn't sure how much smoke was gonna git ta the meat (in that short period of time...meaning tha pepper git too done before tha meat) if I just cored the pepper and stuffed it , so I went the "ABT" route an cut the peppers in half......mixed some cream cheese with Tex's jalapeeny jelly an spread a layer on the pepper...then put my seasoned ground beef on the pepper an then put another layer of the spread on top.....they stayed on til I checked the meat with a probe (160*-bout an hour an 15-20 mins.).....the result was somewhat mixed as the ground beef shrunk away from the pepper and formed it's own lil' "meat loaf" :cry: .......maybe should've wrapped with bacon or used a toothpick ta hold it in place....was kinda messy ta eat too :oops: ......but the taste was excellent :D ......I think next time I'll cut up the green peppers in longs slivers...mix the cream cheese/jelly in the ground beef an embed the peppers in the meat..an roll inta a sausage like shape...that way the meat an peppers will stay intact......an I'll put foil down next time too ta catch tha melted cream cheese......wasn't exactly a stuffed pepper receipe, but was still fun ta make....Buckeye

Man, Ya"ll I gotta try this. I am going to my best buds tonight to cook a brisket. This is gonna be an all nighter.I am gonna try this out with on his family & see what kind of reaction that I get. This will be a idea for my BBQ venture. What do ya"ll think?

I've had them stuffed with ground sirloin beef mixed with minced freshed garlic, red and yellow diced bell peppers, diced onions and green olives.
Good stuff!
