This may have been covered before but since I'm fairly new, I'd like to ask again. What type of knives does everyone use. Complete block sets? A couple of singles? What knife in your collection do you do the most with? The old "what kife would I want if I could only have 1"??? Looking for suggestions for getting some for personal use when the new smoker is done.

I went through the same search awhile back and ended up investing in some real nice Japanese Carving Knives. These knives are used exclusively for my BBQ'ing activities and I allow no one else in the family to use them. Visit the below link. This New York located office is the main importer of "Kikuichi" Japanese knives and it will give you some idea as to what is available. OK I have tried a lot of different knives while cutting meats. My problem was that I wanted something not expensive, yet durable, and most important sharp for cutting the meat with. So I saw an info-mercial about some knives that was a set of knives for $40 bucks or so from Miracle Blade. Good knives and still use them for some task. I am not a fan of cerated blades so these knives i use to cut up chicken when it is raw and for some other things.
One night late I saw another info-mercial on knives this time by Ron Popeil, the inventor of the pocket fisherman, then the rotesserie cooker, etc. He had a set of knives for $40 bucks and you got a sharpener and his solid injector with it. The knives are guaranteed for life never to get dull or break so what the heck can always see how these were.
Guys this is it. The set of 25 knives for $40 bucks is a hell of a deal. I used one knife to cut up 144 racks of ribs and it is still like a razor. These are the best knives I have ever found anywhere. I told some folks and have now ordered over 10 sets for folks to break up the shipping cost a bit. By the way there is a cleaver in the set that for cutting up cooked chicken is the perfect answer. But please be careful these knives are that sharp. I have ordered myself another backup set of these.

Well, call me the outsider again.
I have a combination of knives from different manufacturers.
My chefs knives are wushof trident - expensive, but holds a great edge and great balance.
Have a couple of Forschner misc knives
love the cheap Rapala fish filet knife too - great for slicing in between ribs

Anyone ever use an electric knife for slicing brisket? I use an old cheapy non-serrated carving knife that I sharpen on a belt sander(crude, yet effective), but have two uncles who swear by electrics for slicing. Just wondering if I've been doing it the hard way.

I have used a electric knife at home for long time with great results. I just need something good for cook-offs when I dont have any power.

Have you checked out the Repala cordless electric knife may just be the
answer when you don't have power at cook-offs, I think I'm going to
invest in one of those bad boys course I'll have to do it when the wife
Isn't looking to avoid one of them looks.

I just love those miracle blades. This is definately the best set I have ever used. That slicer with the offset handle is great for slicing. They also have a round ball on the top of the chopping blades for holding when chopping.

Thanks for all the knife advice. I like the number of knives in the set and comments you guys had about the Ron Popeil (sp?) set. I think a set of those is in my immediate future.

I own several FORESTCHER Knives, in my opinion they are the best quality for the money. Use them for trimming semi-frozen meats, all vegtables and so on. I use an electric knife with 10-12 teeth per inch for slicing brisket to turn in. The FORESTCHER 6 1/2 BONING Knife is excelllent for Chicken and ribs. Hope this helps you. Hey Ya"ll, I gotta concur with Bill & Carrie 100% in this one. I also got a set of the 'Showtime' knives from Ron Popiel as well.Believe be folks, this is the best $ for knives that I could've ever spent by far.Even with the shipping costs & all,($56.00) it is a hellacious bargain with all that you get.I especially like the #1 showtime knife for my brisket & ribs. The way that the handle sits up from the blade won't let you rap up your knuckles while you"re cutting the food.I have some J.A. Henkels knives that I ain't even opened up YET. The Showtimes are THAT GOOD ya"ll. I highly recommend them to anybody for whatever reason that it could be.They are a top quality product for a very reasonable price. I own a nice set of Cutco knives (FOREVER gaurantee). They do the job for me and they are sharpened free of charge if they ever get dull. The Ronco knives are definetely a better buy......I just wonder if they have they superb quality of a Cutco

I'm with redneck, I use Forschner by Victorinox. These have a great handle called Fibrox, and it's textured for non slippage. I swear by them, and they really aren't that expensive. Every cook must have a good set of knives, whatever they are. Choose whatever you are comfortable with, as long as it's razor sharp.

I've never been a fan of electric knives because you loose the feeling in the cut. It's similar to cutting blind.
This is especially true when cutting ribs. Sometimes you get ribs that are oddly shaped. If you have a hand knife, you can feel it, and go around it or try a different direction until it starts cutting smooth again.
With an electric knife, it'll just keep on going and could cut through or too close to the bone of the rib.

Big Rob There is a store here in Ft Worth caled House of Blades, I think they are a chain store, am trying to find the website for ya. :wink: :wink: :wink: They carry ever brand of knife you would want. This is where I buy my knives. They also give lifetime free sharpening on all knives, just tell them they are not for commercial use. hope this helps. :) :) :)

Let me tell ya buddy. After 100 lbs of flats the other day, I was GLAD to have the electric knife. Damn thing kept overheating.....

Are you guys serious about the Ronco knives? I mean, they are so inexpensive. Are they really that good? I am ready to order right now, if so. The Wustoff's and the Henkel's are a little out of my range right now; what website should I check out for these Cutco's? Two of my co-workers swear by them.

This may be overkill, but I am with Bill, if I can get something that is cheap and it works.......then I am all for it!! I use the Miricale Blade system and they work great.....I go and buy all my spareribs whole and make my own cuts, the cutting knife works well on cutting up brisket and the fillet knife works great on salmon. Just my own opinion though, I never like serated edges either, but these knives are sharp as heck, just handwash them, NO DISHWASHER, they rust out, but they're sharp and have a lifetime warraty.......................just FYI :D

Ok, I'm gonna chime in on this one...
I just received a set of the Showtime Knives and I've gotta tell you these are great! You can't go wrong with these knives. I'm not sure about the warranty, but they claim to have a lifetime guarantee, all you pay is shipping. That could turn out to be bogus, where you have to pay $50 shipping to replace a $10 knife, but you never know.
All I can say is that these suckers are sharp and seem durable. The cleaver alone is worth the price of the set.
I have the Miracle Blades too, but I think the Showtime knives are better. At least they are more substantial.

Make your own. Whats needed.
1. Bader knife 2x72 belt grinder with many belts and flat platten assy.
2. Bader buffer
3. 440 or ATS-34 stainless steel
4. Handle wood.bone,formica, etc.
5. Address of Paul Bos, pro heat treater in CA.
6. Much time and effort. All above will run around $1800.
I don't have the Ronco veta-vita-vegomatics, but I do have a bunch of Henckels.

As I told you guys & gals the other day......I went to see my dad up near Sherman Tx and we got on this discussion about knives....he uses the Henkels and I use Cutco......both very good knives. After all the discussion about the Ronco knives, I also ordered a set of those.....after all you can't beat the price with a stick. They are less than $2.00 a piece, so I will soon (whenever they get here and I get the chance to use them) give you my verdict :D :D :D
