View Full Version : Brisket & amount of pecan wood.

I finally ordered Bill's Brisket Blend and will try it soon, but I was wondering about using pecan for 11 lb brisket. Never used pecan, was having a hard time locating some so I went on down to the local Academy Sporting and bought a 2 cu ft bag of pecan for 9.99. Nice size logs, maybe 15 logs per bag.
I would start my fire with charcoal and then add pecan as I go. Would this bag do the whole cooking time of 200-250 degrees? Want to make sure I have enough.
This fall I'll be needing to cut down a huge hickory tree out on the property in Toledo Bend, Texas side so I'll keep some of that wood.

I love that pecan. Of course I am on a mission to burn all the pecan I can find, cause I cant stand the taste of Pecans and the trees drop them everywhere. But the flavor of pecan on brisket is hmmm good.

Man! I love pecan wood. We just CANNOT get it up here! Got LOTS of apple though. Man, what it does to pork!

YOu should have enough pecan wood to do a brisket there. Heck it will do everything you can get on the pit so don't stop with one brisket. Just use some charcoal for the heat source and you are on the way.

I brought some of your Brisket "Wonder" Blend to my neighbor, they felt sorry for me (gauge is out- and YES I rely on it) Can't cook right now.
So, we whipped up some brisket and .................................................
WE WERE SPEECHLESS!!!!
Man, this is some awesome stuff..THey are hooked!!

Sounds like we better hurry up and get the brisket blend on the site cause you guys keep talking about it so much. Thanks for the nice things you had to say and especially for thanking all of the great folks here on the forum that helped you out. These are really special folks here.
Just a note to everyone. If yoy wish to order a 2 pound bag of the brisket blend you can do so under the same shopping cart and just add ship brisket blend in the comment section of the shopping cart. This way I will know.

I understand that tha official state tree of Texas is tha pecan...which is in tha same family as the hickory......but Georgia is tha largest producer of pecans since tha late 1800's ( in tha year 2000..70 million lbs. were produced ....that's 140 million pecan pies :shock: :shock: )......here's what's chappin my tail :evil: ....I can't locate a "single branch" of pecan down here!!!! All the places that sell firewood ( that I stop by ta inkire bout ) have only oak or hickory, maybe both....but that's it, nothin else :!: :!: I hear talk of everone else usin pecan, apple, adler, maple an tha list goes on...man am I jealous....seems like Georgia only got 2 types of wood.......I ain't got tha type $$$$$ ta have those kinds of woods shipped ta me........I would like ta experience different woods ta smoke with and taste tha differences, but I'm limited.........what do I do besides whine like a 4 year old :cry: :cry: :cry: :cry: :?:.... Any suggestions?....In the meantime sumbody send me sum cheese ta go with this vintage whine :wink: ...Buckeye

Hey DownHomeCajun, The bags of wood that you talk about,That's where I get my mesquite as well. I don't even burn charcoal.I start up with chunks & add the logs as I go. I will use 1 whole bag on average to do my whole brisket, maybe a little less @ times,depending.I usually do 12-14 hour cooks on my brisket.That 1 bag will handle all that you need to do. The way that I see it, Its a real good investment for what myself & other people like. So you can't go wrong there buddy. :D It's wierd. because I can't eat much meat ( bariatric patient),but I can & do love to cook for other folks.THAT's what makes really happy. Happy "Q" ing.

I'm hopin to hone my edge of bbq knowledge by snoopin' round here a lil' bit. Just might have to try me some of that Brisket Blend if'n it ain't loaded with chile powder. I just can't handle heavy chile powder rubs.....gives me the wind somethin' terrible! LOL! :P
I was wonderin just how deep south downhome was, and we just could might be neighbors for all I know. I'm liking this family already.
