For anyone who has done an injected butt, what do you use for liquid?
Would that Mojo Criollo marinade work? It has a citrus base, so is it to acidic? Would it make the meat mushy after a 14 hour cook?
Any suggestions would be welcome.

What I use is FAB-P in pork and Fab-C in chicken and they work
great adds a lot flavor and not mushy. You can find it at

By the way, do you still apply a rub to get a good bark?

Another tip I picked up is to make criss-cross cuts in the top of the butt about
1 1/2 inches deep then apply your rub spray with apple juice and your
good to go. Finshed product has great flavor with good bark. Another tip
after pulling the pork put it in a half pan, put back on the smoker for
about 30 min. to pickup some smoke flavor in the white meat, remove
from smoker add a little juice and additional rub for taste if needed

Hey Ya"ll. Doug just gave me an idea for this weekend @ the lake with my family & friends. I also am gonna try that new brisket blend as well. This will be an excellent opportunity for me. Again, Doug, thanks for the idea. :D :D 8) 8)
