Asked this question on another forum and no one will answer. At what temp does sugar begin to burn? I seen a recipe for ribs that included a pretty good amount of honey and am pretty sure everything i have read says to avoid rubs and sauces w/high sugar content because they will burn.

I dont know the answer But I know Bill does because we have talked about this before and I am sure others on here know as well

OK lets see if we can help you out. Sugar burns at approx 300 degrees. It is actually a bit higher than this but I like to use 300 degrees. When slow smoking at 200 to 250 degrees sugar should not burn.

Isn't part of the sugar breakdown somehow related to the amount and quality of "Bark" that is produced? Just wondering!

Try using a natural sugar called Turbinado. It is available in most natural (health) food stores and does not burn as readily. Most folks use brown sugar which starts out somewhat burned. Don't know about honey though. I use Turbinado.
