I hear all of you talking about jelly. Being the rookie that am i have never had jelly on my meats. Where might i purchase some ? And at what time is it applied?

I made some jalapeno jelly this year that didn't set real good.
I'm going to try it on some grilled chicken breasts tonight.
I like the jelly on the meat after it's cooked as a condiment.
This batch never thickened up very well and is more like syrup.
I'll let y'all know how it turned out.

I have had the passion & FLAT OUT LOVED IT - warm Grands flakey biscuits/butter & some "PASSION WOW" was out of this world good.

I make my own jalapeno jelly (and mayhaw jelly and strawberry jam ... so far)
It turned out pretty good.
I had sprinkled the meat with Tony Chachares seasoning and maybe should have left the Tony's off the test piece but all in all it was still pretty good and me and the wife et it.

definately try Texanas jellies, they are great with just about anything. Last night we dipped pepperoni in Texas Passion and it was awesome! Ive used the Mandarine Orange on ribs and brisket and even smoked balogna(as a dipping sauce) with good results. sofsr Texas Passion is my overall favorite.

Know way to go wrong with any of Tex's jellies...they are all great by themselves or on meats....Keep up the good work Q brutha!!!

FYI to Tex I got the Jelly in perfectly. We tried the strawberry jalapeno and it kicks butt seriously best I have ever had. Looking forward to putting that apple jalapeno on a couple slabs of ribs.
Did you check to make sure the check came in?

Got my rub yesterday and can't wait to try the jelly. Can you tell me when the jelly should be applied?

Well there are several shools of thought on when the Jelly should be applied.
I spread mine on about an hour before they are done and let it cook in some. Others put theres on when the ribs are standing for about 30 minutes. Then some like Woodrow have used theres mixed in with there sauce for a different kinda of taste ...
Just experiment and find what is good for you. Heck I have some customers just dipping there ribs in the jar!

Thanks Texana, I like the idea of putting it on 30 mins proir to pulling it off. Texana do you surf at worldstart.com coumputer board? I thought i saw you over there. Oh do you sauce both sides of your ribs with the jelly?

Only the one side, the meaty side, not the membrane side. I dont turn my ribs so no need to waste jelly on the bottom. But since I foil them the last hour or so, the excess that runs off is in the bottom of the foil cooking with the juices. Great stuff to pour in beans.

Texana, Just recieved the JELLY! Opened the jar of cherry and couldn't stop eating it right out of the jar. Can't wait to try it on a rack. The heat in it was just perfect! Thanks much and i will certainly be a return customer.

I agree, although I think he might need that arm to make sure his chicken gets cooked...
Sorry Texana (Mr. Moderator), but I had to start ripping on people sooner or later and this was too good to pass up. Tell me, though...how did all of this chicken lore start up? I got the feeling that there was some chicken that never made it to the smoker, but I could be wrong. I am pretty new here and I don't know you guys that well yet. I am sure some of the veterans of this site (Redneck, Qjunkie) will enlighten me.

I got the feeling that there was some chicken that never made it to the smoker, but I could be wrong. I am pretty new here and I don't know you guys that well yet. I am sure some of the veterans of this site (Redneck, Qjunkie) will enlighten me.
Well if I let Redneck or Qjunkie tell you the story it will be more than enlightnment, it would be whopper of a tall tale.
I went out one morning early .... 5 am ... or there abouts to give Gator Pit Kookers a hand at some cook off. There head cook (not Ritch) had to leave for a couple of hours (4 +) and left us directions on what to do. Man we followed them letters to the letter .... We kept them pits to temp, them butts moved around them ribs put on at the right time .... Fetched a few beers for Ritch and heck we even started making beans and they werent even on the list.
Well Head Cook comes back and says all looks good .... about 1/2 hour later he said I dont see not chicken .... nope .... it was still in the cooler. Well they got to workin fast and got the chicken on about 15 to 20 minutes late.
And I aint ever gonna hear the end of it ... The head cook posted up a copy of written instructions on the forum a few days later. I still aint sure that them pictures were not fabricated, but with this crowd it did not matter. Oh and where is Ritch ..... oh he has had many a laugh and kinda let me take the heat, but thats ok ... he will get his one day!
Anyway that is the true story about my lack of cookin chicken. I am sure you will more since I just resurrected this story, but thats ok. I can handle it.
Now since you felt like ripping me, its time you ordered some jelly. Just go to http://www.texaspepperjelly.com and get about 7 or 9 jars and all will be forgiven ....

Well, I am glad I finally got the real story. Hell, I...er, uh...someone else I know has done worse than that. I won't name any names to save them the embarrassment.
Seriously, no worries about the chicken, man. You just have to outdo yourself the next time you have a chance! I am just glad to be able to actually chat with some of you guys on this website. I might not be able to do it pretty soon, though. I am going through a security force school (shooting guns, self defense, running...cool) for the next couple of weeks. After that, I am starting college. FINALLY. I met with an advisor today and learned that I have already accumulated over a year of college for my Navy schools and that I can test out of a lot more. :D This isn't really in keeping with the subject, but I am really excited. I am gonna get ejumacated! YEAH!

Heck I figured he food poisoned and killed a group of senior citzens at a church outing and on the way to the grill clubbed some baby seals and kicked a kitten.
