Looking for a good rib sauce to compliment TeaxasBBQRub. I like KC masterpiece but open to suggestions or recipes!! Thanks.

Ok ... gotta just say what I think.

No harm intended ... Just my own .02 cents worth ....

A good rib with TexasBBQRub ... needs no sauce ....

The best compliment you could do to a rib with TexasBBQRub is ......

Eat it .........

Glad to hear ... feather ruffling kinda comes natural ... it's just a gift ....

The last cook I did, I used TexasBBQRub on everything, had about 12 guests .... made some sauce .... For the reason you expressed .... the guests that said I had to have sauce did not even touch it ... the just raved about the quality of the food ....

I might still keep a little around, but I dont worry about the guests to much anymore .... they usually scarf up all the food without any complaints ... and if they dont like it , they dont have to accept the next invitation ...

If you like sweet sauces, try 5 parts KC Masterpiece to 1 part honey.

If you like sweet & spicy, try 5 parts KC Masterpiece to 1 part Texas Pepper Jelly.

Also Sweet Baby Rays is a good commercial sauce.

I will go with Texana on this one but, if they want sauce, KC Masterpiece is better than most. On pulled pork butts, even tho Bills rub is all that is needed, I use a vinegar based sauce after I pull it. That is what I was raised on and what I personally like. What I am saying is after Bills, use what you/they like, but try it first with just Bills rub.
Was in service with a Shagnasty from NY.

Sauce is WONDERFUL .... expecially if'n you use your favorite flavor of Texas Pepper Jelly ... and with 12 Tasty full bodied flavors to choose from you cant go wrong !!!!!!

If you like sauce and lots of people do serve it on the side warm so people who want it have it ready pour on. If you like KC use it. You can always tweak the sauce in ways to make it your own. Try adding fruit juices to thin it down lemon, pineapple,orange and apple always work well. Then you can add some of Bills rub to add flavor and floaty bits people come to expect in a homemade sauce. Honey added to a store bought sauce adds a nice sheen. I never think store bought sauces have good heat so I add some Pineapple Habanero Jelly one of our members sells to his friends to kick the heat up(PM Texana about the jelly http://www.texaspepperjelly.com/ ). try HEADCOUNTRY, or Four men and a Pig. or also combine Famous Daves Devils Pit w/Famous Dave's RichnTangy(or something, cant remember exact name of it, the sweet one). I also agree w/having texana's jelly there maybe as a dipping sauce. the people will think you are crazy at first but get them to try it--you wont have enough food for them. I recently did up some ribs for some people who thought if it had sauce on it then it was bbq, i didnt offer any sauce and simply spread that jelly on the ribs. I only got two ribs out of three slabs.

I agree with Tex, my guests usually want suace, but I try to get them to try it without....most people have never taseted real BBQ, they think they need sauce on everything, I try to hold them off until they tast the meat....then they know what I was talkin about. Your meat with Bill's rub will be out of this world! For those cases where people are not convinced, I use Bill's sauce recipe but I make my own salse, puree it, puree one whole Mexican onion, add a cup of rub, and 1/2 cup of honey.......thats some good stuff........Bill's recipe for the suace should be in the newsletter you got when you signed up. I don't put sauce on the meat I let the guests decide from there. Normally I make a basic bbq sauce and then modify it to match a mild, medium, and hot. Gives me something to do while waiting for food to cook and before people show up.

I love stuff sorching hot but 99% of my friends hate it hot or have a food allergy like onions, peppers, etc so I always found the best compromise is none but provide it.

I will post my full sauce recipe and the base is:
White onion
1 cup brown sugar
2 cups ketchup
couple tablespoons worschetier sauce
salt pepper
fresh garlic
1 cup water

For the hot I will add some chopped up habernos and for the mild some chopped up jalapenos. Sometimes I will add other indgredients depending on my boredom and level of creativity that day but that is the base.

Sweat the onion and garic add rest of indgredients and simmer for 35-40 minutes. Let it cool and then for a smooth consistency put in blener and puree. It should be a dark red to almost brown by the time it is done cooking. If you like it sweeter add more sugar. Personally I don't.

Shangnasty, truth be told, sauce is much too complicated for most of these Tejas guys to make. Bein that yer from Kaintuck, I'd just smother it in Jim Beam , or Makers Mark! Woody
