So far i have only been smoking baby backs, I am going to try pork and beef spares. Will the spares take additional cooking time?

Not too keen on comparing cook times on the baby backs since I mainly do spares, but I'd go 225-235 for about 3 1/2-4 hours with a steady smoke. Wrap in foil and finish at 250 for 1 hour. Verrrrry tender.
Some like them when they are falling off the bone. These will do just that. I really prefer mine to be tender enough to come off easily, but only where I bite. To get this, I do not wrap in foil at all. Just prolong the cook about another hour on the pit.

Thanks Fatz, Any special reason you do not do baby backs? Do you do both pork and beef spares?

Hey Larry,
I dont seem to think so. I have cooked baby backs and the only real difference I see is that you might want to keep them on a little less than spares.....depending on the cut of the spares (St. Louis or Kansas City). I typically cook mine at about 225 for about 3 hours......hope that helps 8)

I cook baby backs just like I do spares except about 1 hour less time..The main reason I don't cook more baby backs is that they are toooo expensive!!!!! :shock: :shock:

Well i have to say the spares came out awsome! Seems they need to go a little longer than the babybacks. Today i have loaded up the smoker with 6 racks of babybacks 1 rack of spares and 20 beef short ribs. That is all she can hold. I did some spice adjusting to the rub. More heat on one rack and added dry mustard to the rub on another and more paprika on another. and just for the hell of it left 1/2 rack bare (salt and pepper only). Bills rub it excellent and i shouldn't mess with a good thing but just can't help myself. Do any of you adjust :?:

I here ya there Red, They are quite expensive. You said that you cook the babys about one hour less. So that would be 4 to 4 1/2 hours at 220?

for me & the Mrs. baby backs don't taste as good smoked. They just suck up the flavor and you end up eating bitter meat. Spares, on the other hand, can handle the smoke. Probably some funciton of the meat structure and fat marbling.

Anyhoo, I used to use the 3-2-1 method for spares (3 hours in the smoke, 2 wrapped in foil, 1 back in the smoke to dry out). Anymore I let them go in the smoke until done. I make a mop of honey and Bill's bbq sauce for the last 15 minutes or so.

If I do baby backs on the smoker I have to run all charcoal. Just our tastes.

Way to expensive around here. Hell spares are at 2.49 at Sam's and Baby dang near 4 dollars/pound. Picked up spares for 1.98 on sale could have gotten St. Louis for 2.40/lb but figured I would just do it myself and have more fun plus extra meat for baked beans.

every now & then bbbacks hit $2.50/#. last time I bought 3 cases.

if only brisket prices would come back down.

Down here on holiday weekends, briskets drop to .59 to .99 cents per pound. They usually limit to 2 at a time, but I don't mind making a few trips out to the truck.

Store ads come out on Tuesdays and with Labor day this weekend, I should know very soon. Randalls, HEB, or Krogers usually drop the price that weekend and since Wallmart matches ads, they will also. I have been to Dorecks, but usually buy my meat at Sams club because it is usually $1.32 per pound every day.

Keep an eye out on the flyers.

Wow brisket for 1.32? The bbbacks out here are 4.99 on sale! I can't hardly find a brisket anywhere. That's California for ya. It is beautiful out here with the ocean close by and the weather is always great, but the cost of living is sky high!

Oh forgot to mention that i tried two different rubs along with some alterations of Bills rub. When the ribs were done Bills rub (as purchased) tasted the best. I should have known better than to mess with it :oops:

Larry,

I'm jumping into this kind late but for my money spares are the only way to go. Besides the fact that they are almost half the price of BB you get more for your money. In comparision they have so much more meat on them and they take smoke very well. In my opinion spares are always worth the extra time.
