This Newbe did a Brisket for the first time on my brand new Treager Pellet Smoker. Did exactly as Bill said. I turned the pellet smoker on the lowest heat setting, put the brisket on, fat side down, after rubing it with worcester and Bill's #1 rub. 7 hrs later when the temp reached 170, took it off and foiled it with Bill's BBQ sauce receipe, put it back on for 3 hrs, took it off, temp 200, let it rest for an hour. It sliced beautiful and it was melt in your mouth tender.
I never talked to anyone out here in Calif. that even knows what a Brisket is. Quess I could show them a thing or two.

congrats on the brisket. You mention brisket around here and most ask what is it. Sure is easy to cook following Bills info, or the rest of the group that live here. I think brisket is a Tejas thing, but sure is good.

Sounds great, but there is a tradition you must have overlooked. You have to send such a brisket to Texas for official taste testing. Send it to me. I will share with the others here. Promise...Well, if anything is left. :D

Which Traeger model do you have? How would you compare the Traeger to a more traditional pit?

I agree that brisket isn't that well known. That is okay, though...that means there is more for those of us that already know about it. Maybe we shouldn't tell people about brisket after all...

Next time I fix one, I'll send y'all some so you can give me some pointers after you can regain your senses after you eat it.
The Treager Model that I have is the Li'l Tex
As far as the Treager vs traditional pit. The thing that I looked for in a smoker was, start the thing, load the meat and forget about it until it's time to take it off. The only drawbacks are even at the lowest heat setting it cooked a little too hot. Treager has an optional variable heat control that sells for $185.00. A little too much for my pocketbook. I'm looking for a control that I can wire myself to slow the auger down a bit. If any of you guys have any suggestions, let me know.
The other drawback is that it only smokes when the pellet auger shuts off and then when the auger starts again the smoke stops. I'm trying to figure out how I can put a smoke assist in the cooking chamber so that it smokes all the time.

Neil, I have a variable speed feed auger on my pit. If I want it to go slow, my brain tells me not to move my arm so fast when I throw the log on the fire. Fast works pretty much the opposite!!! :lol: :lol: I have noticed the control mechanism getting screwy lately and the servo sticks! Woodcan

Neil,
Greetings from another pellet pooper owner. This is a non-traeger approved modification. Take your control off the pit, (unplugged) there should be a small grey dial thing on the board, it is probably set around the 2 position. You can set that down around the number 1, that is the control for the feed rate. Need to make sure you keep it fast enough to keep the fire burning.
I went ahead and got the thermostat control, works well. You will reap a great deal of information from the board, it is a good place to hang out and learn. Bill's rubs go great on a tri tip too, rub those bad boys down, mix up some mesquite and oak pellets, about three hours or so around 180, take them off at medium rare, tortillas, salsa and beans. Almost as good as brisket, and cooks a little faster for instant gratification.
Watch out for the Tulare fog.
