View Full Version : Well I had to order another 12 lbs of rub!!!

:lol: Looks like hanging around here has paid off big. I just got booked for a Labor Day cook out for no less than 80 people. On the menu will be 8 Pork Butts, 10 Brisket Flats, 21 Slabs of St Louis cut ribs, 25 Cornish Game Hen split in half, 4 Salmon Fillets and 4 spiral sliced hams. Why do I do this to myself "Because I Love To Cook Bbq" hell yes!!! This is going to be a BLAST. I got the job from a Welder by the name of Bill Blackwell. He and I were talking about adding a extra pullout shelf and charcoal basket to my pitt. He new I was tight on cash and waiting for my Mrs to get back to work before doing the mods to my pitt. Wife works for the local school system and does not get paid for the 6 weeks off she gets every summer. Anyway Bill calls me up and asks me if I could do a big BBQ for his Nephew and told me if I am fair he will do the mods to my pitt for free. After talking to a really nice guy named Lars I took the job at a fair price for the customer and got the added bonus of my welding being done for free. We all win ya gotta love that!!! Both Bill and Lars are really friendly people that I would be glad to call my friends. After talking to Lars about the Cook Off and large parties I have done he is going to help sponsor my Cook Off team and talk to some of the people at the cook out and try to get them to help out as well. What a way to end my summer one more big cook out and another chance to feed lots of people my OUTSTANDING BBQ.
:D As alway I have to thank Bill Cannon and all the members of this site. Without all of your help and friendship I would never have taken a job like this. Now I don't even think about it I know I have the skill of a true Pitt Master!!! :cry:

If you aren't thinking about it anymore, then you must be doing well! Good luck on the cook! How much (or even how do you) do you charge for a cook? This may have been covered before, but...

Well its hard to say if you were buying the food and doing all the sides it would be 25-35$ a person for a cook like this. My customers are paying for my hourly services and he gave me cash for the food. You charge a fair hourly rate for your time and your wood. I know this is not a great answer but get what you can for the time you put in. People like these I do a better hourly rate than I would do for a stranger.

The Fat Matts shirt should be XXL I am still on the large side and I like my shirts loose. XL would be fine if ya have no other choice.

101. Man, those guys better be hungry with all that food your cookin! Good to see nice things happen to nice people! I'm doin one for 60 today and tomorrow (only have a backyard pit) 3 briskets-5 butts. Should net out about about 50 lbs of meat. It's all men so that will be plenty! Foilin everything and they'll reheat in their Alto Shamm oven at the golf course which is good , cause I'm playin in the tournament! How far are you from Balimer(Baltimore for you Tejans.)?

101. Are the stated spiral sliced hams already cooked and if so, how long would you have to cook/smoke/warm them up?
Also, not to get personal, you have to pay for everything except the meat: foil, wood, gas, etc. If you were not getting some free work done on your pit, how do you come up with a figure on your time? I know different areas of the country would be more or less, but your time is money even tho you love to BBQ and one of the best things is being told that you cook outstanding and it's the best I ever ate: I mean pride!!
What I am asking is, if someone said I'll buy the meat, how about cooking for me, how do would I charge a fair price?

Seriously, I'm spending 25 hours over the next two days cooking for 60 on my small pit. I'm taking two vacation days to do it and bartering for comp golf for the rest of the season (about $ 300 value). That means I'm gettin about $ 10/hr and expenses. They bought meat/sides as they have a party center and food license. I actually bought the meat so I could have Quality and Quantity Control! They reimbersed.
Best part is, I like doin it! Let's face it, the only reason all of us do this is that we love the accolades and kudos that come from feeding people good food! Big ego boost! The money is gravy! Wood

:wink: I have never done one but I am willing to bet it should be warm through in about 2-1/2 hours wrapped then I open it up and hit it with some of Texanas Jelly and Bills #1. If not I will cut it off the bone and lay it out on my grates just long enough to finish the job then into foil pan and done. After all it is already cured and smoke so it should be just fine.

I am coming to Qfest. I told Bill I am going to send him a check for my new order and adding the 30$ for Qfest. I would not miss this for the world. This cook out is going to pay for my airline ticket.

Well everything turned out great! Talk about a great crowd of people to cook for! They loved eveything that came off the pitt. We even gave away the extra pork butts as door prizes. What a trip to hear someone shout out when he won the first pork butt. I talked to the owner of a Big Green Egg who just started smoking and grilling and he will be stopping by the site I hope. I did get one complaint though I had one guy complain the the chicken breasts were big enough for 2 people to eat! I told him to share it with and friend!
:wink: My friend Bill Blackwell the welder who added the extra shelf to my pitt was there and we spent most of the day together. The new shelf works great I will have to get someone to take pictures of my pitt to show you all.
In the end we all got what we wanted. Bill to do a favor for a family member, Lars to through the best BBQ his family and friends have ever been to, and me I got the welding I needed done not only for free but done by a real craftsman. Alls well that end well!!!

Yea people loved the Peach Jelly glazed ribs. and the kicked up BBQ sauce. I just balanced my check book and I am sorry to say I never mailed you a check for my last order. I will put it in the mail in the morning with Bills check for the Rub which is gone!

Bill have you ever thought of selling the rub in 5 gallon buckets????
