I just got done rubbing down my three 12 lb briskets for cookin tomorrow. I order them "untrimmed" from the butcher and they come with about a 1/2"fat cap, which is good. Thing is, there's this 1 x 3 x 6" chunk of fat on the flat side over in the corner. It's real hard. I just trim it out. You all know what I'm talkin about? Cookin these tomorrow. C-town is comin over to watch. Cookin five butts Friday. Big doin's. Wish me luck. Woodman

5:00 am, they on next to a nice oak fire! about 55 degrees outside and clear as a bell. coffee's good! woodeye

About 7:50 here now. Been liftin weights for about two hours. Gonna take a shower and assume the "pit watchin position" soon. Mixin in some apple for balance. Sun is up and the birds are singin. Feels like early fall. Woodly

Quarter after 9 here and I got till 4:00 and will be off 7 days. Gonna start a brisket tomorrow....
You some kinda body builder Woody? Two hours lifting weights is a loonnnggg time LOL. I really need to start working out again...I stopped boxing and I guess I figured that meant I had to stop exercising as well.

I would kill to have my workouts down in 2 hours. Problem is I end up talking to much. Took me dang near 2 hours to get in and out of the gym to do back. Spent 30 minutes talking when I got there. Lifted for an hour and then spent another 30 minutes trying to get out. I am switching gyms just to get away from people that I know. Chest/Tri day was dang near 2.5 hours. Lifted for 1 hour and 15 minutes with supersets on a couple. *sigh*

Supersets? My trainer use to say "it's not how long you stay in the gym, it's what you do while you're in there"......he believed in working out hard then getting out........try working out on a heavy bag for just 30 min. straight and you will be pooped 8)

Yes Siree! 2pm here ...been doing 12 oz. curls since 12:30 thats a long time to be workin out this hard. :shock: :shock: :shock: ..need a break to rest and then make myself continue my daily curl session..... :wink: :wink: :wink:

Took them briskets out at 3:00. Sliced off the deckles, trimmed the fat off of em, and threw em back on till 6:00 pm when theyre nice and black. Cube em, sauce em. Voila! Burnt ends! They'll be the most commented on item there! Foiled the flats/ juices. Friged em. Made a gallon of patented Texas Jelly/ Spicy/Sweet Sauce. (I know, I know, but you'd BETTER have sauce if your makin Q up here!)Reheat Saturday and slice real nice! 5 butts tomorrow. C-town came over for about 4 hours. Nice guy. Hey Tex/Ritchie, he's hooked on the big pit now. He's a wayward WSM guy but he LOVED the Klose. Couldn't keep his mouth from waterin! Sadly, he hadda cut out before the boys came out so's he couldn't get a taste! Bummer! Next time Greg, I'll have more beer! Woodman

The pleasure was all mine Wood!! Thaks for the time and the tips. I will be by myself as I reveiw the digital pics I took of the smoker!! WISH I could have had some of that beef but we certainy live close enough to each other to accomplish that at some point soon!!

All done for today! Pit cleaned out. Pork slathered, rubbed, and bagged. Will continue the adventure tomorrow.-Wood

I just seen an F-18 pull a COBRA maneuver over the lake,that's not all
at the end of the cobra,he stood on his tail,rotated 180 degrees,and peeled away upside down!!!!!!!!!Have never seen that,and i'v seen everything! :shock: :shock:

PS Butts done at 3:00 ( all eight pounders). Cleaned up by 4:30. Delivered wrapped meat , sauce , and detailed reheating instructions. I'll help cut and chop the meat cause I don't want them ruining good meat with bad technique. Only tasted 1 piece of each meat to sample. It's all good. Thanks for the help here for makin me the man I am today! :wink: :lol: And thanks to the members of the Academy......

Saga Over. We sucked at golf, but the food was a HUGE hit! As I predicted, the Burnt Ends were a walkoff winner! People love that chewy spicy sweet beef! I dropped the meat yesterday. They heated, cut, pulled , and chopped and served to us when we finished. I also made the sauce ( Strawberry Habanero -Texas Pepper Jelly infused).
This was the first time I got to really enjoy my cooking as an observer rather than a participants point of view. I cooked it all yesterday. Didn't have to prep it, or, clean-up. Just play golf, drink beer, and eat Q. I must say, that it impressed, even me. Brisket was sliced perfectly @ about .125". Pork , awsome. Burnt Ends.......well! Everyone was blown away. Offers to do more and, some 50 somethings offered to take me home! Maybe 20 years ago ladies!. Got to get a bigger pit someday! That was fun! Wood

Woodie...made that BBQ sauce this weekend for the pork butts I did and man...RAVE reviews from the crowd. I had mine and then a bottle of Sweet Baby Ray's and, well, let's say all the the SBR was left and mine was almost gone!! Plus, an added bonus is the house smells great when you are making it!!

When can I come back over and watch you smoke again?!?!?! 8) 8) :lol: :D

Just ate the last six slices of this brisket almost 12 days after I cooked it and it was GOOOOOOOD! I LOVE THIS BBQ STUFF! Woodmaniac

Sauce is pretty simple

2 cups Ketchup
1 cup Texas Pepper Jelly(s) of your choice
1 cup Cider vinegar
1 TBSP Liquid smoke
1 Tbsp good chili powder
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tsp celery Salt
1 tsp celery seed
1 tsp cayenne
