How would I go about making a good "Carolina" sauce/whatever you call it for pulled pork sandwiches? I am planning on cooking the pork butt this weekend and I normally use BBQ sauce, but I am wanting to try the real deal. Any tips/recipes?
By the way...yes, I use BBQ sauce. So there!

Eastern NC Sauce (like Scott's)
1 cup apple cider vinegar
1/2 cup water
1 Tbl. Diamond Crystal kosher salt
1-1/2 tsp. red (cayenne) pepper
1 tsp. paprika
1-1/2 tsp. ground red pepper flakes
You'll need your spice grinder for the last ingredient.

Carolina Mustard Sauce
1 Qt White Vinegar
1-1/2 Lb Sugar
1/2 Tsp Black Pepper
1/4 Cinnamon Stick
1-1/2 Tsp Crushed Red Pepper
1 Tsp Cumin
1/2 Tsp Chili Powder
2 Tsp Cajun Seasoning
1 tsp Garlic Powder
2 oz Red Wine Vinegar
1 qt Prepared Mustard
2 tbsp Pureed Garlic
2 tbsp Pureed Onion
1-1/2 C Honey
1 tbsp Lime Juice
1 tsp Grated Orange Peel
2 tbsp Pureed Shallots
Mix all ingredients well. Adjust sweetness and salt to taste.

South Central Carolina Gold
1-1/2 cup prepared mustard
5 Tbsp brown sugar
4 Tbsp tomato paste
3 Tbsp apple cider vinegar
1 Tbsp Worcestershire sauce
1/2 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 cup water
Combine and simmer for 5 minutes to dissolve sugar

Hey Baugherfam....I saw a site a while back sumwhars, a list (resupees) of bbq sauces from different regions...(I noe yer interested in tha Carolina style)...must've been hundreds of em' :shock: . I can't seem ta locate that site, but I think I printed it off...that's sumwhars too :oops: ....I'll look fer it this weekend.....there were so many ta choose from, I coodn't make up my mind which one ta make...so I "tweeked' sum KC Masterpeece :twisted: :lol: :lol:

Deceased uncle secret NC sauce. Nothing secret about it. This is the basic most used in this area. If you want to add to it, you can.
16 oz cider vinegar
8 oz water
1 teaspoon red pepper flakes
1 teaspoon salt
1 tablespoon sugar or brown sugar
That is it. I just used a bunch this morning on some pork butts I cooked yesterday. Just add a small amount at first and keep tasting it as you add more. You dont want to over power the pork.

62, He knows better than that!!! :twisted: :twisted: I got a sauce recipe I will give him if he must have sauce ....Thats ths little part of yank coming out of him :shock: :shock: ...I will make him stay after school and clean erasers and write 500 sentences ...I do not use sauce, I do not use...... :twisted: :wink:

Bauerghfarm, you related to Boomhauer? Believe what Tar River Rat says. His recipe and BBQfla' s are both variations of real this Eastern Carolina "sauce." Shred that piggy and douse it generously with the this concoction. Good Luck-Woodman

Suggest you start with the basic vinegar base sauce and go from there. I like the basic and do not stray much from there. Then you can doctor it up to your liking if you want. I think you will like it and if you need some more heat, add some more pepper. The sauce does become warmer the longer it is made, say several weeks. You can buy most the sauce they use at most BBQ places around here.
