View Full Version : WHATCHA GOT COOKING THIS WEEKEND

Got my usual:

One brisket, three racks of pork spare ribs, boiling corn/potatoes/onions, and one whole chicken, throwing some jalepenos in the upright and just let them smoke whole.

Redneck, Texana, BBQ Doug and the wives may be over to crash my party tomorrow. I am prepared. Got pepper spray for Redneck and I'll hold BBQ Doug's van hostage if Texana cuts up too much. That's provided it ever makes it back from the trip to Mexico. :wink:

I made a big batch of BBQ beans in my new Dutch and cooked a slab of spares, a butt, some shrimp-kabobs and some 1 inch sirloins. Baked some 2lb taters, too.

Needless to say, the four of us are slap full. :!:

Time for a nap.

I am doing a 13 lb brisket with a rub i just threw together will start it later toniet using some mesquite and oak. I will also be throwin on some large baking potatos later to smoke those and some shrimp stuffed with pepperjack cheese , green chiles, and wrapped in bacon and some pasta salad to round out the menu and oh yeah i think i will bake a pecan pie.

Got everything going on the pit finally. Got a late start. Bill, Texana, Redneck, and Robbie kept me up all night.

Left my dang propane tank at the shop and had to use coal to light my wood. I hate that. Now I am off to the shop to get the tank so that I can use the burner for my corn and potatoes. Way things are staring this morning, it will probably be empty and I will be driving around trying to find somewhere to fill it.

I'm just hunkerin' down here in the hurricane. Dang slow storm is hammering the state. Fortunately I'm not directly in the path.

no meat today- just roasting 40# of chiles and smoking another 40# to make smoked chile powder.

I may take some pulled pork from the freezer and stuff some of the peppers- lightly fry and yum.

it was too long of a drive to bbq this weekend.

I am 9 hours into a 16 & 18 pound brisket, got potato's boiling to have potato salad, and need a good pinto bean recipe..........

I done mine Friday night at the football game.
I cooked about 200 of the 8"long (bulk box) Party Time Links for the band boosters to sell as sausage on a stick in the concession stand.

I missed the game (and it was a good one, but we lost,but it don't matter cause it wasn't ditrict) but I sure eat a bunch of those links.
Quality control has to be rigidly enforced when cooking.

I still smell smoke when I shower.

3 Racks of Ribs,

Pork picnic shoulder,

All at 225 Degrees, nice and slow,

Put together a peach/honey glaze for the ribs,

Just experimenting.

We got power back about 2 hours ago, yeah!!!!

Some tri-tip steaks Friday night (along with baked/twice baked potatoes), a pork butt for sandwiches along with chicken breasts and hot wings last night. Nothing tonight, just leftovers...which isn't too bad!

This might be a little late, but I just checked the website, so...
1 bag of Pinto beans
4 tomatoes- chopped
6 jalapenos- chopped
1 med onion- chopped
1 bunch of cilantro- chopped
1 pkg. of bacon- chopped

Pour the beans out of the back and take out all of the ugly beans, the ones that are black and brocken. Then soak them overnight in a pot. In the morning drain the water and put new water and you can put salt of garlic salt, whichever one you prefer. Bring them to a boil and then turn them to med/low and simmer for about 3-4 hours. When they are almost done you can chop up all the veggies and bacon. Cook the bacon and add the veggies. When that is all done you can put it into the beans and let them cook for about another 1/2 hour.

Naturally, you can adjust this recipe to suit you. It has always worked out for me!

I did a couple of 12 lb briskets Friday night. They never saw Saturday night. Gone...ahhhhhh!

Pork spares (2), split chicken breasts, and had grilled chicken burritos Sunday night. Spanish Rice, pinto beans, homemade tomatillo salsa, tomato salsa, and the left over meat from the spares!!!!! Plus, macaroni salad!! :D 8)

Hope eveyone has a great Labor!

Did one 7lb pork butt for Saturday and another for Monday. Both turned out great. Also tried my hand at my own BBQ sauce(thanks Woodie) and everyone loved it!

Also threw in some baked beans yesterday while the butt was cooking...ummmm that pork fat dripping in to those beans...YUMMMMIE!! :lol:

Smoked 2 brisket flats Saturday. They turned out good! Also made a pot of beans to go with.

Smoked two Coke can chickens and two racks of spare ribs. Grills six steaks, corn on-the-cob, asparagus, stuffed mushrooms, jalapeno poppers, and some squash.
