I have a large group comming this weekend and was wondering if it would be ok to apply the rub several hours ahead of time? Thanks for any replies! :D

Yes you can apply the rub ahead of time just be careful i applied a rub to some steaks one time the nite prior. The rub had a high sugar and salt content and it changed to whole texture of the meat. But a few hours should be fine.

Whatcha applyin it to? I apply rub 6 to 24 hours ahead dependant on cut of meat. Briskets or butts, 8-24 hours won't hurt you. Wrap it in plastic or, get one of those 2.5 Gal. Ziploc bags. Re-Apply rub in the morning before putting the meat on the pit. Should do ya! Good luck, Woodley

I always apply the rub the night before on brisket..........very different than applying to s small cut of meat like a steak :D

I"ll have to give that trick a try. I have to do a 14lb brisket next week for my bother-n-law's birthday anyway. I am gonna give that a whirl. You guys ROCK!!!! :D :D :D :D :D

PS: I rub mine down the day of and let sit in the fridge for about 3 hours.
