View Full Version : Need Help.....Very Strange

Did 2 Briskets...after 10 hours, pulled briskets out of pit (got tired) and put them each into a seperate pan.....one in Pyrex (glass) and one in stainless steel....covered with aluminum foil and put in oven @215.
The weird part is I open the oven door and the stainless steel pan is covered in what appears to be bird droppings...... :?: I take my finger and remove one of the little bird dropping looking pieces of whatever it is and when I do there is a hole in the HD aluminum foil.....so I remove another piece of the greenish looking stuff and the same thing.
Now I check the other pan (Pyrex) and it is fine....So I take out the pan with the bird dropping looking stuff all over it and totally replace the aluminum foil with new foil.....come back several hours later and the same damn thing has taken place on the new foil with the other pan being fine........never seen this before and need some answers............Dale
Well, I'd say right about now we need some Twilight Zone music in the background.
Did you put the same rub on both?
Did both pieces of foil come from the same roll?
Was the piece on the ss pan first off the roll? If so, could there have been something on it before you tore it off?
Is it possible something got splashed on before it went in the oven?

Can't remember which piece was first off the roll of foil........but like I said, I took off the foil from the ss pan and replaced it with new stuff and it did it again.
Nothing got splashed on it.....esp. something that can eat through foil.....
Me and my little brother just tasted the brisket end also and it tastes great.........but we might die soon though

The actual little spots aren't even occuring where the aluminum and steel meat, but rather towards the middle where the meat is

You guys are too much :D The briskets both turned out wonderful.....probably the best I've ever made.......
BBQinFL: I do believe you are correct in that the use of dissimilar metals is what caused the problem (although the little droppings were not near where the stainless steel and aluminum came into contact).......I can only guess that whatever kind of acidic quality the meat may have had must have amplified this affect since the spots were predominantly right at the fat end of the brisket where the aluminum actually touched the meat......
I was actually worried about eating it period but I did anyway before serving it to anybody else the next day. All I can say for sure about the situation is........WEIRD :shock:

Good post I would never have thought of using one of my wifes stainless steel pans just for the smoker and now I know I never will. I will stick with foil and foil pans!

Smooth I use foil with stainless all the time and never had this happen maybe its that cheap crap your using :twisted:
