View Full Version : New Brinkmann Wal-MArt special round upright. Help

I just went and got one of those little Brinkmann Gourmet stand alone round smokers. You know the ones.

My question is,. should I smoke this brisket on the top rack or the lower rack right above the water pan?

I do not intend to use water. Is this a good idea? I have never had an upright type smoker so this is suddenly brand new again.

I have a brinkman also and when i do brisket on it i use the top rack and it comes out great every time. i always use water though so not sure how it will affect the cooking.

Fatz, the water pan is just a heat deflecting device. If it is full of water it creates steam to help keep the meat moist during cooking. I would put the meat on the top rack with water in the pan. :D :D :wink:

You can place a drip pan on second shelve to catch any juices.

KEEP A VENT OPEN as these cookers can "over smoke" your meat if you are not careful.

You can also remove the water & place a deflector pan on second shelve & keep the lid off to get a grill temp of apx. 300; good for "grilling ribs".

IMHO (& others) charcoal will work better than all wood & pellets can work great in these cookers as well (they win on the trail)

Ps. I still have my first smoker (from 1977); a MECO water smoker. Still works if I want to use it.

Fatz, why a Brinkmann...I've heard those things need constant attention to keep the temp correct. Also, I don't think they have any dampers on the bottom to control air combustion. Typically people who have a nice pit like yourself don't go back down to a Brinkmann.

Woodman has 2 of the same ones you just got and they are collecting nice dust in his garage since his Klose pit purchase. Can't even compare the two!

Just wondering why? :shock:

THat's all. I got it cause it was cheap and I don't have to use as much lump to keep it going. Just trying something new.

I'm sure once I get my bandit, this thing will go to dust.

Yo FATZ, I also heard that you can also try using Apple juice in the water pan when smoking & some cut up bell pepper, sliced onion & whetever that you want. I hear that works real goood. I have never tried it.I am thinking about giving that a whirl with the bigger pit that I have like you. I just thought that I would say something. BTW, Ya"LL, I'M BAAAAACK!!!!! :D :D

Hey Fatz..tha onion an green pepper deel?...I uzta do that when I uzed a "el cheepo"...can't tell if it made any diff in tha final product, but it sho did smell good while it wuz cookin and it makes ya look like ya noe whut u iz doin' ifn' thar happens ta be a few spektaters eyeballin' ya :P ....If ya do this.. fermember ta cleen out tha water pan when yer finished....it kin git a lil "hairy" an nasty if left in thar fer a coupla weeks :oops:

I cooked on a Brinkmann Gourmet for four years before buying a Weber Smokey Mountain. The Gourmet worked pretty well after I modified it (adjustable vent over the air intake, grate in the charcoal pan so the ashes would fall through and not smother the fire, real thermometer). As for putting juice, spices, onions, etc. in the water pan, I personally don't think they make a bit of difference in the final product. But as they say, YMMV. :wink:

I also have a Brinkmann Wal-Mart special. I have always used water in the pan, so I don't know how using something else would affect your final product. I have also always put brisket on the top grate. I haven't uet had any problems with keeping constant temp (I always use charcoal with wood chunks/chips). My only complaint so far has been the thermometer...which Dsorgnzd may have solved for me...thanks!

Would I like a different smoker? Sure! But, I am limited on room and cash flow. I will get another one sometime, so you can bet I will be coming back for advice at a later date.

Neck...Fatz got a Brinkmann not a WSM. Big difference in performance and price!!

My poinmt exactly...why go to the bottom feed when you have a spectacular pit coming from one of the best!!?!?! I don't get it either?? :o :o :o :shock: :shock: :?: :?: :roll:

Oh, and I did find the perfect use for it until I get my Bandit. My new Dutch oven fits perfectly right down inside it. I had the beans screamin' today at work. I cooked up some ribs and finished a brisket and the beans for a meeting we had at the main credit union branch I work for. Not all on the upright. Did the ribs on my big Brinkmann and my dad told me they were the best ribs he's ever eaten.

I could never ask for a better compliment from a better man.
