View Full Version : what materials can you cook with ina smoker?

Can someone list materials 'safe' for smoking in? And I mean safe for the material not the food. I notice aluminum pans discolor with smoke and are difficult to clean (though vinegar & hot,soapy water work okay). I've also had some small ceramic dinnerware on the smoker for short periods (until she caught me). So before I go ruining a good stainless pot, ceramic dish, or copper bowl, I'd like to know what other people have experienced. :?:

I typically dont use any kinds of pots and pans in the cooker, but when I do, I use my old cast iron, it seems to hold heat well, and not get discolored as much. I typically cook beans in there..........hope this helps! 8)

I typically only use disposable foil pans, roll foil, and cast iron cookware.....I do have a couple of s/s serving pans I use to keep things warm, but if they dis-color I use a Brillo pad on them...the dis-coloration is not a problem because I bought them to use only with my smoker. :D :D :D

I used a couple of the wife's plates once, had to clean them with oven cleaner. They cleaned up nicely.

Skippy, I don't use nuttin' but throw away alum. foil pans. I just use them to put water in for the mosture.After that I wash them up some w/hot water & Dawn & use them again later. I can usually get a few cooks in before I have to 86 them. Hell, they ain't $1.79 & the dollar store for a 2 pack.

You can actually use food service grade clear plastic wrap up to 265 degrees. You can put it right on the grate as long as that 265 is not reached.

I learned that in Pitmasters school...hehe...lol.

hey thanks guys. The issue is mainly for catering ops where I want to serve from warm containers.

In the end I think I'll combine ideas- stop by salvation army for some good iron cookware, and then keep warm in the chafing containers. They are steel and then I can put them directly into the warmer baskets and any discoloration would be hidden.

BTW, I've observed that you can sometimes get good iron cookware at walmart (new) for the price salvation army wants for some things.
always glad to help charity, but they shouldn't try to cost things like new when they aren't.

Hey Skippy..If ya got a Sam's (don't noe bout Costco) they been havin a set of cast iron pots fer $34 an sum change...Comes in a wooden crate.....a 10"dutch oven, a deep skillet fer fryin, a reg. skillet, a griddle, a pot lifter, a lid(s)....tha brand name iz Wentzel's er Wenzel's :roll: ..I don't noe tha qualitee difference between it an Lodge, but fer $34...I don't care!...Not zactlee shur on tha contents I mentioned but it's close. Thinkin bout gittn' anutha set.

The bset places to get iron cookware is Academy Sports or Army/Navy stores. they both carry anything you would want in iron and at a good price.

Bucky, the way I see it is first you gotta be able to think before you can speak :shock: :shock: :shock: :D

Dont pnder this problem very long cause you'll have a melt down!!!

Skippy...u jus ***** outa luck all tha way round, ain't ya? ( specialee on tha back end :P ) ....now tha cast iron wuzn't round tha reguler pots & pans...probalee round tha campin quitment an coolers an such...that's jus in case ya didn't look there. Ax em bout it an if they iz still stockin em....see if they kin "Silent Sam" one fer ya :D

Too late now...1044 popped that kwestyun on me an I dang blew a gasket!!!! I'm walkin' round tha house wif a severe limp an droolin profuslee like a rabid mutt!!!! :shock:.....I think it's onlee fair 1044 that ya share sum of yer meds ta help a brutha out. :P
