WOOHOO!! I won Grand Champion at the Paul Kirk BBQ class!!!

As some of you know, I enrolled in the day long Pitmasters class taught by Chef Paul Kirk held in Slidell, La. today. We were "schooled" in the art of choosing the right cut of meat, trimming meat, rubs, sauces, and other valuable tips. We cooked a brisket, a pork butt, one slab of ribs and a whole chicken. At the end, the Lions Club's (sponsor) wives (and others) judged the meats by KCBS rules and my results were as follows:

Chicken - 3rd
Ribs - 3rd
Pork butt - 3rd
Brisket - 4th

And I won Overall Grand Champion!!!! There were approx. 12-13 teams.

That and $0.50 will get me a nice cup of coffee, but it definitely made my weekend well worth it.

I still can't believe it. This was the first time my Q has ever been judged. I'm going down to the bar and get me a drink.

I took some of my brisket to the bar to "barter" and got a free tab. The two bartenders (girls..woohoo) said it was the best they ever tasted.

From what I understand, he'll come for a class as small as 20 at $195-200 per person.

Dang good class, though. I can't believe all the things that I have incorporated into my routine that help tremendously.
