Never done it because I figured it is cheaper to buy chipoltes then buy them and then spend 8 hours or so smoking them.

I ain't never dried no peppers out but I have grilled them.
Something happens inside a jalapeno when you slowly grill it.
It leaches out "heat" from the seeds and stuff or something.
I mixed some fresh (uncooked) ones in a potatoe recipe that I cook on my grill and didn't really put that many in it and they were chopped up.
Those potatoes were so hot that it made your mouth feel like a chemical burn.
I was the only one in a table of five that could eat em and they weren't ALL THAT good to me..

Capascium is what gives any peppers its heat. It is found not only in the seeds of the peppers but also in the ribs.
What a lot of hot sauce makers do to get the really hot sauces(extracts) is actually cook the peppers down to a liquid slowly and is basically concentrated hot sauce. The hottest hot sauces like Blair 6 a.m. and The Source I have heard cook habarenos down for 3 days till it is pure capascium. You would hate to smell it. I have done it for 8 hours and my house smelled wonderful to me but people were sweating walking in the door.
Take a jalapeno and eat it with the seeds and ribs and it is hot. Take out the seeds and not really that hot but still got heat. Finally remove the ribs and no heat hence why a lot of jalapeno poppers are never hot.

P.S. I have taken jalapenos deseeded and debribbed them and friends of mine who can't stand anything with heat could not even tell they were in my salsa.

Va, unless you are really motivated, forget doing this yourself and go to www.pendery's.com and look for the "Meco" Chipotles. These are a golden color and are fantastic. They are reasonably priced in bulk. The folks in Mexico do these for DAYS! Also try the Pasilla De Oaxaca which is a smoked Pasilla pepper. Indespensible in salsas! Woodman
