Saw the mighty Bobby Flay on TV and someone was cooking tri tips. What cut is that? Never heard of it.

Not exactly sure, but that is all they use in good ol' Texas Red at chili cook-offs.
It's jes like a tip, 'cept there's 3 o them thangs.

The tri tip is the bottom part of a sirlion. They used to be ground up for burger in the past, but are very popular in the west/southwest.
I personally love the tri tip - great marbling, flavor, and pretty easy to cook. I only grill these great pieces of meat over oak coals.
Next time I cook or cater some, I'll snap a few pictures.

They must grind them up around here if it's a left coast thing. The sure looked good and had the people smacking their lips. :P

Whut's tha preferred method of cookin these...I've seen writtn' akounts of peeple grillin them fer tha most part...kan ya slow cook em tho? If so whut's tha proceejure? :roll:

I think ya can smoke em. They cut them up with tortillas beans and onions out in Californy for a thing called Santa Maria BBQ. Wood

Thats correct, the tip is very popular out here in Cali. Its a very good cut of meat, I use the 3-2-1 method, cook it for about 3-4 hours, wrap on the last hour, let it rest for 20 minutes, then eat!!! MMM 8)

Buckeye, are you sure that wasn't Santa Anna you heard about??
I asked a butcher in Food Dog tonight and shehad never heard of a tri-tip. Said it must be new. :roll:

Thanks for the greeting ... I mostly lurk on this board. I smoke on a Weber Smokey Mountain unit, but dream of the day when I compete with one of the monster smokers I see on this site.

What is Tri-Tip ????
Why thats easy. It's Tips that come in three's.
Example:
1) Dont fry bacon in the nude!
2) Dont play with Rednecks big black bic!
3) Dont let Ritch cook chicken!
See three great tips, three at a time.

Yep Tri-tip is big here in calif. I get mine at Costco, in my opinion
grilling that great cut of meat is the only way to go and if done
right it's to die for.
