I usually leave my wood chunks in a bucket full of water, but after a day the wood starts stinkin'. I can put a top on the bucket and it keeps the flies away, but I am wondering if you drain your wood after your cook?

Once I get my Bandit, I'm gonna try and go straight oak topped with hickory with a little lump here and there, so I prolly won't use wet wood.

That stink is from the tannic acid....a friend of mine uses the water from that to cure or "Tan" deer skins n stuff (the old fashioned way).......

When I'm usin the "little smoker" I dry my chips/ chunks back out after I'm done. Woodman

If you have the space you can take the soaked chips and put them in a ziplock baggie and toss them in the freezer until next time you need them. This way they won't stink and they'll be ready in a moments notice.

Sounds like you will be needing a freezer Fatz. Or is that a Fatzs freezer. Anyway, with the heat you have ,i don't think thet will stay wet long.

why do you soak your wood in water when most posts here say never use green wood ? Isn't wet wood basically the same as green wood?

no, no, no no! Green wood has resin and sap in it that will create creosote. Wet wood simple steams and burns slower. you are really wetting it to try and avoid flame. I would only recommend wetting if you are using a bullet. Wood

I guess the theiry is that wet would smolders instead of burns so you get more smoke with less wood.

I used to soak when I had a small brinkman offset. with the larger longhorn, the wsm, and soon to be gator I've never soaked.

I, too, was using the Brinkmann and the wet wood just somehow seemed (seems) appropriate there. But, with the Queen, I'll only be using dry. Somehow, that just seems right in these bigger pits.

I absolutely LOVE being able to stick a whole dang log or two in my firebox instead of stinkin' wet chunks.

I am the happiest crawfish in the swamp.

Congrats on the cook this weekend, red. The guys at Gator Pit was talkin' about ya while I was there Saturday. All good, of course. I look forward to putting a face with the name soon.
