When I was pickin' up my Turkey Breast last week, I also got some fresh thighs and legs. (yeah, yeah, why didn't I just buy the whole bird).
Anyway I cooked up the legs with the Breast last week and they were all great. No rub, no oil, nothing but apple juice/honey brine. Nice crispy skin was achieved by letting the bird sit uncovered in the fridge overnight after the brining. Dries out the skin allowing it to get crisp.
Last night I tossed the thighs on the WSM. Just took them from the fridge, sprinkled with Bills #2 Rub (Brisket Blend), gently separated the skin from the meat on one side and got plenty of rub underneath. Put them on the Wimpy Smoking Machine at right around 300*. (Sometimes I like to do poultry a little hotter instead of low and slow). 2 hours later, these thighs were done, and what great flavor they had.
