View Full Version : Turkey Thighs with #2 Rub

When I was pickin' up my Turkey Breast last week, I also got some fresh thighs and legs. (yeah, yeah, why didn't I just buy the whole bird).

Anyway I cooked up the legs with the Breast last week and they were all great. No rub, no oil, nothing but apple juice/honey brine. Nice crispy skin was achieved by letting the bird sit uncovered in the fridge overnight after the brining. Dries out the skin allowing it to get crisp.

Last night I tossed the thighs on the WSM. Just took them from the fridge, sprinkled with Bills #2 Rub (Brisket Blend), gently separated the skin from the meat on one side and got plenty of rub underneath. Put them on the Wimpy Smoking Machine at right around 300*. (Sometimes I like to do poultry a little hotter instead of low and slow). 2 hours later, these thighs were done, and what great flavor they had.

Sounds great to me. I personally fried two turkeys this year for Thanksgiving trying a new spice blend out on them. They were great and Texana was the leader of the cook. He did a great job on the turkeys while we all sat around and watched him go to town.

Bill, Have you ever thought about experimenting with making you own injection marinade for meats? Be it poultry, pork, or beef.?

Yes I have been working on that for awhile just to see what it takes. In fact I used that to do my turkey at Thanksgiving and the results were very good. More research is involved in this so will keep working on it.

Texana redemend himself while we were at the cook off in Floatonia. Even Doug and Bill said his chicken was a winner. Now we no what happened to the chicken Tex was supposed to bring Fatz for the cook off :roll:
