Steel, some of these guys would kill for the stuff you can get. In my opinion, apple is the best wood to smoke with. You can try www.bbqwood.com . I believe that they are in Washington so shipping would be reduced. For chunks or chips , you can't go wrong there. They have just about everything. Good luck. Woodman

Hey Steel Toe..welcome to the funny farm. Smoked up 20 lbs of homemade ring baloney just last weekend using a base of Kingsford Mesquite flavor briquets and a periodic double handful applilication of Pee can shells. Got three trees in the backyard which was loaded up this year. The warden been cracking them things like crazy here lately. Turned out purty good. Aint never tried no almonds. Now like the other feller say..apple wood is real hard to beat too.

Oh by the way,Apple with Oak is a great combination,, hit your ribs
say at the 3rd hour of say a 7 hour apple, oak cook with a bit of Mesquite for 30 minutes. Then finish with using only applewood.
I try many different combos lots of fun.

thank you for the great response, its great to hear frome some other smoke addics. 8) I just put twenty pounds of pork shoulder in a brine mix thrusday for smoking on sat. I smoke it for twelve hours or more at 120-140 degrees with a combination of wood chips, not allways the same guess I should write it down. :( makes the best KC style Bacon . I have a Great Outdoors gas smoker http://www.cabelas.com/information/CampingFoodPrep/GreatOutdoorsStainlessPropaneSmoker.html

Welcome S.Toe / my bro. lives in Seattle / I am due to visit this coming summer.

ps. Apple with a hickory chaser has won the National's several times now.

pps. I would bump your heat temps up some & 'as for me' / I just did some butts / I don't brine them / butter fly cut / a soy based sauce / brown-spicy mustard / & my fav rub / cook @ 200 deg. till an internal temp of 190-195 / moping every few hours / & wrap in foil & let sit for a few hours = yum yum

Welcome Steel_Toe. I also have a GOSMS Gas smoker and a GOSMS charcoal smoker. Haven't used pecan shells as I can get pecan wood here in Texas. Pecan, oak, peach, & mesquite are plentiful in my area and I can get some apple occasionally. I have to buy hickory and would love to try some cherry.
