Buckeye,
I have never heard of anyone smoking a whole deer. Deer is very lean you get the majority of you meat from your hindqaurters there is not much meat on the ribs i know some ppl use them but my dad uses them for dog treats. other than that you get some small fillets and steaks and the front shoulders and maybe some meat form the neck area. hope this answers you questions.
I can say this / these TEXANS have a lot of & big white tails / oh sure.... Texas has corn feeders & say 'here kitty-kitty.... BANG BANG BANG / HOWEVER / they taste like crap / ‘compared’ to an 'all it's life corn/soy-bean fed / BEST apples in the World / OHIO/MICHGAN white tail.
I grew up trapping furs for spending money / hunting deer & pheasant.
Hey Buckeye / ever been to;
Buckeye Lake?
The Blue Hole
Oldintangy Caverns

I recall as a young man, some friends and I spent a cold afternoon slaving over the pit with a couple slabs of deer ribs. By the time the ribs were done, we had talked up the great feast only to discover they were the driest, toughest, inedible thing we had every tried to eat. The coyotes agreed. The onion sandwiches, however, were delicious.
Venison is very lean. I have had a smoked hindquarter, that was tasty and not overly chewy, but a bit dry. Venison lends itself well to sausage and chicken frying.
