Sorry fer tha title but that's eggzacklee whut I got rite now.....Cooked sum butts last nite an wuz pullin em'...took a taste test an there wuz a darkish peece of meat I tried...it wuz mushy and tasted probalee like ****! :shock: Wuz thiz sumthin that I shooda cleened out? All tha rest of tha meat taste find, but I can't test every peece of dark meat ta see if there's still more of that....****. Hollah back sumbodee. Gotta devise a plan B fer tha client.

That's not tha problem Fred......that dark meat wuz on tha inside. Had nuthin ta do with soot or intake. This taste wus not like tastin bitter meat....it literalee cooda been ***** ....ifn' I didn't noe tha anatomee of a pig. :shock: Sorta had tha texture of mushy liver (I noe that's redundant), but tha taste wuz way werse!

Never had that happen to me eather I guess it might have been somebody kicked your pig in its ARSE. Maybe some else can shed some light on your nasty pice of butt! :wink:

Why do u think it's called BUTT? Maybe a section of chittlin was routed thru

not that i know anything, but since you said it was on the inside, have you seen that before? i mean, is there normally something dark on the inside?
i've done a few butts and can't say i've ever seen anything like you describe. did you get a bad piece?

Could've been some sort of injury like a contusion. Its possible that the hog got injured while they were killing ang hacking him to death. Woody

Had a similar problem with a double cryovac pack of butts from Costco a couple weeks ago. One of them was fine the other butt was like mush all the way through! :shock:

No just lurk .... have tried to talk up my Jelly, but there rules are more stringent .... seems like a bunch of nice people .... Bill and I are donating prizes for a contest they are supposed to have for December.
We shall see if it generates any interest. I will say this a lot of them have seen the light and are using Bill's rub.

Buckeye, I've heard that there can be a gland in the pork butt. They are usually removed, but sometimes left in. Maybe that's what you ate.

Brewdawg....now that ya mentioned that...I think I red over on Basso's forum bout there bein a "gland" of sum sort that will ruin yer taste buds ifn' ya git hold of it. Whut I tasted mite be whut they wuz reeferrin to. YUK!!!! :( :o :shock:

Bucky, I have had the same problem a few times with butts. Usually it is the meat against the bone that has the highest concentration of blood in it . That blood cant escape through the meat so it cooks between the bone and lean meat causing it to get mushy and dark brown. I have found this to happen only on extremely fresh cut butts. I always score the butts I cook with a knife before I cook them seems to help. Hope this helps out my brutha!! :D
