I got the Klose Mobile Catering Rig fired up and gonna fill it with the following things...

6 fresh hams 22lbs each
18 racks of ribs
5 Briskets (packers)

Told the wife we need to order a BIGGER Klose :D . Her reply was "we bought one size bigger than we thought we would need".

I never would have thought that BBQ would be so popular in New Jersey.

Greg, that's why I'm starting with a 30 x 72 with upright! Definitely mre pit than I need now (as one good friend :wink: has pointed out to me,) but in two/ three years I'll hopefully grow into it! Woodman

Greg use the 1-2-3 method on the wife, almost always works. !. bigger pit 2. more business=more profit 3. more profit= more wifey goes shopping Important that wifey sees only modified profit sheet(less beer,snacks money for personal dance lessons at the local dance club aka lap dances at the Jiggly Room etc)

Hey Greg, that's why I have been thinking about going up Nawth to do my BBQ gigs man. The market's WIDE open up there. You & Herper 62 are sitting on top of a GOLDMINE up there in ya"ll's nick of the woods. Woodman too.

you got that right Paul, this summer a guy was selling Carolina style pulled pork, ribs and chicken from a stand in his driveway and had people waiting over a hour to order. real good Q, but only part time business. problem is most places around ct dont know good Q, so you get over rubbed, over sauced, cant taste the meat crap passed off as Gods gift to Qin. maybe after somemore experience I may try small catering jobs to test the waters, cause the handfull of places doing it right are making good$$$$$$

Hey Herper, I was told about a place in Bridgeport that had the worst tasting S*** that you could ever eat. From what was told to me, it tasted like microwaved food with a ton of BBQ sauce on there. I can't remember tha name of the place tho.

I cant remember the name but its on Main St I think. sauced todeath(not even real good sauce) cant taste the meat and the animal mayhave gone near a tree once or twice in its life, so no smoke flavor. place was doing good business. I gotta get next spring here and get practicing and maybe roll the bones and try catering some small events. just wont do chicken, and wont feed the homeless to avoid Buckeyes mistakes from the past
