ok smoking gods help me out,,my dad want me to smoke a deep hind quater for him,,,im gonna do a pork butt as well,,i smoke at around 200/225,,do i need to put the pork or deer on top???and how long does a deer hint quater need too cook???do i do the 123 thing???

Austin, I've never cooked deer before so I have absolutlee no advice ta offer on that..sorry...but from whut I've red bout deer.. it'z a lean critter....tha temps r ok fer tha pork but not certin fer tha deer.....but I wood at leest put tha pork butt on top (fat cap down) so that tha drippin's will baste tha deer meat....Sumbodee will be round shortlee ta tell ya eggzacklee how ta cook that car wrecker. :wink:

Redneck just posted some directions let me see if I can find it.Bucky, My son and I smoked a whole deer hind quarter last season. Injected up real good let it marinate for about 24 hours, cooked it at about 240-250 fer bout 4 hours, wrapped that bad boy up and in about 6 more hours it fell off the bone just like Chicken

of coursenot, the deer was put on the pit and fell off the bone do to cooking, not cooler corrosion

I'm glad that that question was asked. I was thinking about doing using Bill's 1-2-3 method to begin with. I know that deer is lean meat to begin with. If I remember right, the last time I did a deer shoulder, I used an upright water smoker & let it go all night long on the thing. I didn't have a temp guage on it tho, but I know that it was a long slow process. This time I think that I am gonna use charcoal heat with wood for smoke kinda like last time. I have been using wood for heat & smoke before. I know that charcoal will hold temps longer. At least that's been my experience.
