OK, a guy at work gave me a pound or two of Alaskan Halibut he caught on a recent vacation fishing trip. Probably can't smoke it (or can I?) but there are some good cooks on here, anyone have a suggestion for something relatively easy I can do with it to impress the family? cooking wise that is...you bunch of sicko's :shock:

Sure you can do it. I'm sure it would be great! Mostly when I do fish, I use a soy sauce brine with assorted spices. I brine them overnight, pat dry, and do a colder smoke on them with fruitwood.
The soy is nice, takes a lot of the harsh fish taste out of it.

I'd deep fry it in a vat of Texas Pepper Jelly!!!! You might say to yourself .......Woodman, on fish? YES! it brings out the natural fishiness of most fish. WM

You need to stop shootin up that Jelly its realy starten to affect your posting. Texana you done a bad thing to poor Woody. Oh yea try Texas Pepper Jelly on ice cream it brings out it natural Ice Creamynes. :roll:

Isn't halibut the same as flounder, just bigger ?
I like to grill flounder, then melt butter and squeeze some lemon juice in it for a dip.
The following recipe was give to me by the folks on here (don't remember which one) but it was GREAT on shrimp and should do well on fish too.
I'll let y'all know if I ever get to go catch some more flounder.
1 stick butter
2 tbl minced garlic
1 tbl ground black pepper
1 tsp salt
1/2 tsp dried oregano
1/2 tsp thyme
1/4 tsp cayenne ( more if you like it hotter )
2 tbl worcester
Brush it on as it grills and I think you'll like it...I know my family did.

GM< actually, flounder is much more delicate than halibut. Flounder is more akin to sole , or roughy, while halibut is likened to swordfish, shark, mahi mahi (dolphin). The latter fishes are almost always cut into "steak" form , while the former are filleted and much more difficult to grill without an implement to "hold them together." Woodman
