I see that some of you use apple cidar vinegar and some use just apple cidar. Is one better than the other or what is the deal. Thanks Michael

Sometimes I will wipe/rub down the ribs with apple cider vinegar before I apply the rub.
If I foil my ribs (sometimes I do, sometimes I don't) I will sometimes spray them with apple juice or apple cider.
I have yet to dry Bill's suggestion of putting some jalapeno slices in with the ribs when foiling.

I prefer cider, but I'm not certain if it really matters! In the absence of cider, I'd use straight apple juice. Not sure if I'd like the acidity in this application. WM

Rub ribs down with Cran-Grape or Cran-Apple and spritz occasionally before you wrap...works wonders :D :D :D :D
It also mixes great with Vodka!!!

Apple cider vinegar best in a sauce, if you cook dry and don't glaze you can serve sauce on the side, either a vinegar sauce or tomato.
Vinegar and pork were made for each other.

Howdy Jim! :D Welcome to the board. Have I seen you on the Brethern board?
I very seldom foil Ribs / unless I have overcooked the outside a bit / I am now using a "Cran-Apple" spray (picked-up from the "Cowtown Cookers" @ the Flatonia cook) / & like it very well /
The Bob Gibson recipe calls for wrapping after 1 hour on each side / with 1/2 cup grape / 1/2 cup apple juice / then pull out & put a finish glaze on it at a lower temp /
The General is fired up again today / 2 racks & a butt.

Hey Jim!
Welcome to the Texas BBQ Rub site! Good to see you over here.
This is a friendly group and only partially crazy... hmmm... scratch the partially, make it mostly.
Hey, fellow members of the nut house, give Jim a warm welcome. He has been BBQin' for many years and has a wealth of cookin' knowledge that he is always willing to share. Not to mention quite a few BBQ Trophys on his mantle... :)

I've heard of his "method". I tried it once, but my wife got pregnant anyway   (he told ya we were cazy Jim!) Welcome to this group. There is a wealth of knowlege and tomfoolery abounds! It always amazes me how we have these" pockets" of BBQ'ers. Ohio, Washington, Michigan, and of course the usual suspects in La, Tx, NC, Ga. Glad to have your added expertise here Jim! Woody

Woodman,
Uh-Oh, sounds like a possible throw down situation. Many Southerners, especially Texans still believe that General Robert E. Lee is just resting the troops and they are very touchy about that issue.
GOOD LUCK with Redneck, you'll need it!
