View Full Version : Double Stacking Ribs

Saw a segmint on tha Food Channel a while back and they were showin tha Rib Burnoff (I think that wuz tha name) in Canton Ohio (weekend of tha Hall of Fame game)......an one of tha teems would place their slabs of ribs on tha grate meat side down then put anutha slab on top of it, meat side up. Sed it cooks well and inkreeses yer cookin capacitee. Sounds "do-able" an seems ta make sense. Haz anyone ever herd or done this before? :roll:

Hadn't heard of double stacking but I have heard of rolling them up and using a skewer to hold them together. Never tried it though. I like to do St. Louis style ribs Yum Yum.

We had a couple guys on another forum cook them this way. You can stack them 3 or 4 high. They need to be rotated during the cook. Move the bottom rack to the top of the stack. Since the meat is not exposed to the heat & smoke for the entire cook your cooking times will be longer but you capacity is greatly increase without rib racks. This is 15 rack of ribs in a small smoker.

Woodman 20minutes south of Hartford. Be great to get together. just remember ct idea of Q is something done on a high heat grill, but there are a couple of good places. marked those days on the calendar and told the family no planning anything those days

Red......az u so eloquentlee put things....."I don't need no stinkin rib racks"! (no offense Ritch :lol: )
Betsy got plentee of chest space ta hold a few slabs (11 racks....7 slabs per rack)
I wuz thinkin in terms of my Chargriller offset fer maybe 6 slabs.
No need ta waste wood firing up tha big pit. :wink:

Ain't nothing wrong with it if you are gonna just eat 'em. Not a good thing to do in competition with the appearance thang and all.

I use that exact method to get a 120 racks on my Traeger (I use for production cooking) works real well. Still need to know your hot spot and rotate to different areas of the pit to keep some racks from getting over cooked.

The number of ribs I could cook, was the main factor in the size and design of the pit I ordered. I can't tell you how many times I have run it through my little brain. Woodman

R ya gitt'n xtra shelves?........hell, I kan't fermember if'n ya sed ya wuz or wuzn't. :roll:
How tall iz tha uprite? Nevermind that......
Jus tell Dave ta make yer shelves 3" apart.
When ya ain't cookin' a boatload of ribs...take out ever other shelf an that'll leeve ya 6" of room fer sum butts or sum barnyard pimps ta go on. :wink:
