Congrats. There are a bunch of good recipes and how-to tips floating around in cyberspace. One of my personal favorite sites is run by a nice fella named Jerry Fowler. His site is located at:

http://www.northwestsmoking.com

You will prob eventually want to invest in a dedicated stuffer. Grinders work fine for grinding but dont stuff too well. Northern Tools is a good place to buy equipment for a reasonable price.

Hope this helps.

Dittos on the sites Bigwheel gave you. I'm hoping Santa brings me Northern Tool's 5 lb. vertical stuffer. :) Here's another good site for info and formulations: http://home.pacbell.net/lpoli/index.htm

Now, I'm still curious......do you buy the sausage packing some where? Or is it made? Just curious, I am on the verge of convincing a friend to get this for me for Christmas....any help would be appreciated. Thanks.

We really need a bookmark post of moderator chosen links to these topics like this. I know that when I was looking for knives, I was referred back to a great topic here from a while back. It would be great to have a sticky with

"This is a great link for sausage/sausage making"
http://www.texasbbqrub.com/phpBB2/viewtopic.php?t=1786

"This is a great link if your looking for knives"
http://www.texasbbqrub.com/phpBB2/viewtopic.php?t=568

"Some good stuff here for blah, blah, blah"
link

Shut up, FATZ, and go cook something.

Hey Cal, I buy natural hog casings from a local Italian deli that makes their own sausages. The Bass Pro Shop here sells collagen casing, which is too fragile for my use. Several web sites sell casings. Here's a link, scroll down the page.
