Anyone have a recipe for doing stuffed peppers in the smoker?
I'm thinking about a green bell pepper
pulled pork
rice
cheese (cream, shredded or just a hunk of a good cheese)
topped with bacon
If you don't have a recipe, how do you think I'll do with the above?

In my part of the world we call something similiar ABT's(Atomic Buffalo Turds).
12 large Japs.
1 softend block cream cheese
1 tablespoon favorite rub
left over ribs, pork butt, brisket, ****tail sausage, shrimp, etc.
1-2 packs bacon
Remove stems from japs(or any other similiar shaped pepper) cut canoe shape out of the top of the pepper or slice in half lengthways. Remove all the peppers inards. Stuff with cream cheese, meat and rub. Wrap with 1-2 slices of bacon depending on pepper size. Cook cream cheese side down at 300°f for about 20 minutes. Turn cc side up and cook until bacon is crisp(about another 30-40 minutes) If you cut them length ways fill with leftover meat then use cream cheese to make the other side of the pepper. Wrap with bacon and cook the same. These little treats are heavingly. Have fun.

Got the ABT's down pretty good, just looking for a variation of them. Thought trying with bell peppers would make something different as a side for open house Christmas eve.

Texas Pepper Jelly mixed in with the cream chease is awsome !!!! And you have a variety of flavors to choose from !!

Greg check my website. I have a photo tutorial that shows how I cook the peppers. We like them better than ABT's (just personal preference). Go to the "PLANT" section and click on PAGE 5.

How 'bout shipping a few samples of them to New Jersey? Never tried anything like "pepper jelly" before. Who knows, maybe I'll become your biggest customer or even a distributor.

Ever get a recipe for stuffed peppers? I want to cook some and did a search and got this thread. I did a meat loaf once and it worked great. Stuffed bells should be similar.

Person aint lived till they stuff up a bell pepper with some good spicy Boudan. We got a storebought brand showing up down here at Kroger and Super Target called Holmes' Smoke House peecan smoked Boudan. Just bust it out of the cases and fill em up. It flat knock off your socks. It made by Texas coonasses of course. Believe I would split em..hollow them out..fill em up and do the bacon wrap thing..then into the smoke. Whew I am making myself hongry here.

Sounds good Bigwheel. I'm a fan of boudin blanc myself.
Well I did the bell peppers with ground beef, onion, tomato sauce, a little sugar, rice and topped with bacon. Smoked 'em for a couple of hours. Not too shabby. Wouldn't mind doin it again.

Hmmm..sounds mighty yummy to me. About the only thing I like mo betta than stuffed bell peppas is cabbage rolls. The old Frugal Gourmet had a dang good recipe for those things. Wished I could remember who I loaned that book out to.

Neer tha same receipe....cept no bacon...topped with cheese insted.
Bacon's a nice touch......will do next time. :wink:

I like to doctor up my cream cheese with fresh roasted (or smoked) garlic, onion, bell peppers, etc. I usually also fry up some bacon or sausage to mix in. I drizzle with olive oil and use any rub (TexasBBQRub might just work the best!). Since I received my first order of TexasPepperJelly yesterday in the mail, I decided to mix some Pear Habenero in with the concoction, as well. Wrap in bacon, drizzle with a little EVOO and sprinkle with more rub, and mmmmm, mmmmm, mmmm! Might just be the best Jalapeno Poppers I've ever had. Those were grilled, but they work just as well (possibly better) in the smoker. The slight sweetness of the TPJ was a great contrast to the heat and the rub.

I'm with Bucky in that I like my stuffed bells topped with cheese.
Sometimes, my wife mixes things up a little and throws in some navy beans. It actually lightens things up a little and smooths out the texture. I don't like it all the time, but every now and then is good.

I wouldn't know Bigwheel...
I never cooked em like that ...and I'm about 30 miles from coonassedness, I'm a horses *** !
But I always figured they'd be good.

Do look mighty tasty. Made a similar version a month or so back. The only drawback on mine was the Boudan come out tasting a little bland. Think next time I will kick it up a notch. About decided it takes something assertive to fight its way through that overwhelming bell peppa taste. Now whut pray tell was the seasoning in the little paper cylinder? Looks like the Cavendars general configuration but the writing looked different. Thanks.

RickyB, I cooked them on a Weber Kettle about 45 minutes. Coals with oak chips on one side and the peppers on the other, cooked with lid down, rotating about every 10 minutes. Don't know what temp, probably 300 to 350.
Bigwheel, the boudin and the spice came from Don's Specialty Meats:

Their spice is one of the few cajun spices that's not salty as all get out. It's right outside of Lafayette. I go there about once a month. :)

Well looking at your handiwork and taking the virtual tour of the Boudan factory has done flung a bad craving on me. Fortunantly the warden was in Kroger so I call her on the cell and tell her to bring me some. Try Holmes Smokehouse Pee Can Smoked Boudan sometime. For regular old storebought stuff it aint too bad. Now I have had two reviews on their reg linked sausage. One fella say its the best in the world and the other fella say it aint worth a flip. Guess I gonna have to break down and buy some oneday just so I knows for sure.

The stuffed peppers will only be as good as the boudin, and I haven't found any really good boudin (to my likin) west of Port Arthur. There is a lot of "bland" boudin out there, Dang sure nothing very good in the Houston area that I have found.
I stuff chicken breasts with it ,and pork chops with it, for grilling. Also like to stuff pork chops and chicken breasts with a good green onion sausage.
