Ok, So I dont know that much about tuning plates.....I know they help out the heat right? Would it be wise to use them in a bullet smoker? Just curious from some of you veterans that use em? Thanks!!

In a bullet style cooker the water pan is used as you would tuning plates in an offset.
The water pan can be used with water, sand or dry. The water pan can replaced with something like a pizza stone or a disc of steel.
When using something other than water you need to adjust for the radiant heat that is produced, this is great for higher pit temp cooks.

Try using Dr Pepper or Ginger ale too! Or, as they would call either of them in Tejas.....coke!
