anyone ever tried these,,great little snack,,something to munch on while the briskets,and butts are getting done,,,
get your favorite sausage I like jimmy dean hot,,unwrap place whole on the smoker at 225 cook to about 165/170 slice and eat,,,,rubbing is up too you ive done both ways,,usally takes around 2 hours

No , never tried it.......yet. I love breakfast sausage though. I can see throwin it in at about 4 am when on a cook and slappin a slice on an english muffin or biscuit! Egg on top. Cheese. mmmmmmmmmmmmm

Thanks for the idea. We don't have muffins but we do have biscuits. Sounds like a great idea for Christmas breakfast. I got some Jimy Dean Maple sausage. Got to flavor a precooked ham, for dinner. I'll do it like ribs. Smoke it for a while, then wrap it with pineapple juice and cherry jice and then glaze it with orange marmalade. One more of those high test 7UP's and I might not remove the wrapper of the sausage.

My favorite is to take a link of Bigwheel's Texas Hotllnk out of the casing and wrap some brat or Italian around it. You end up with a Fattie with an attitude, kinda like my ex OL.

Bigwheel's Genuine Texas Hotlinks (revised 12/24/04)

6-7 lbs. Boston Butt
1 bottle beer
2 T. coarse ground black pepper
2 T. crushed red pepper
2 T. Cayenne
2 T. Hungarian Paprika
3 T. Morton's Tender Quick
2 T. Whole Mustard Seeds
1/4 cup minced fresh garlic
1 T. granulated garlic
1 T. MSG
1 t. ground bay leaves
1 t. whole anise seeds
1 t. coriander
1 t. ground thyme

Mix all the spices, cure, and garlic into the beer and place in refrigerator
while you cut up the meat to fit in the grinder. Pour the spiced water over
the meat and mix well. Run meat and spice mixture through the fine plate and
mix again. Stuff into medium hog casings. Smoke or slow grill till they are
done. Wrap in a piece of bread and slap on the mustard heavy. Bob Wills
music and Lone Star Beer on the side.

Thanks BW! I'm gonna look into a good grinder this week. We have a great "Old Fashioned" hardware store in Amish coountry near Canton, Oh. They have the largest stock of non-electric appliances in the US. Lehman's Hardware in Kidron ,Oh. They have wood stoves, ice cream makers, meat grinders, everything the average Amish Family could need.

Well I tried the hand grinder thing one time back in the real early 70's and figgered out I just aint good at it. Will stick with my 1 hp SS Chicom Commie big mama electric model from Northerntools. It will grind up one of them Amish horses purty quick I think..maybe even the buggy to go with:)

Now, if you could just take that attitudinal fattie and stuff it in a gigantic pepper, cover it in cream cheese and wrap it in a slab of bacon secure the bacon with a few chop sticks and smoke... then you'd have something to talk about! :D

Now sounds like yall hot on the trail of some type of combo yankee and Texas po'boy turkdunken type thing here. Think now all we need to do is plan on running the whole pepper encased torpedo up a Mississpii boar squrirrell and cook it in foil till the juices run clear. Know its making me hongry and it aptly demonstrates the old beauty in diversity thing upon which the liberals so love to pontificate. Maybe put the fully loaded squirrell inside a Georgia Coon. That should do the trick. This would sell for 500 bucks an ounce at the Cajun Specialty Shoppee...and the yups be glad to fork it over too.

Austin, I like to keep a fatty in the fridge or freezer. They're great for breakfast and on grilled pizza! :D
