On a Sam's Club size brisket flat (5 - 7 pounder), how long will the temperature plateau typically last ?
How long can it last ?

That plateau thing will last from the time it's still raw all the way to the hockey puck stage. Give it 3 hrs. in the smoke and 3 hrs. in the foil with some Campbells beef broth. Everybody will be happpy and plateau in unison.

I think there ain't no text book time......but fer a edukated ballpark guess....plat- toes r round 3-5hrs maybe? :roll: (don't hold me ta that)
Yer 5-7#er may plat-toe fer only 3hrs.....whereaz my 5-7#er may "hang" fer 5 hrs. Have had my butt "hang" at 165° fer 4hrs......Before I new bout this plat-toe thing....I wuz definitlee frustrated an confused. :?

A plateau on a 5-7 lb flat won't be any different than on a 8-12 (or so) pound packer cut. I'd guess 3-6 hours. Separating the point doesn't speed much up.
Of course, I like Bigwheel's idea.

I've found that I can help that plateau along by puttin it on the top shelf!
