I always do spares with the 3-2-1 method...Someone gave me some baby backs to cook for them... Would 2-2-1 be about right?

The last baby back ribs I cooked: Removed membrane, rubbed with Tejas BBQ rub. Smoke 3 !/2hrs, slathered with Kc master/pepper jelly, back in for another hour at 220*. Took off pit, wrapped in foil and into dry ice box till I ate them. Slapmommagood. Could have done in 3hrs in smoke. Did not use foil during cooking.

how much pepper jelly do you mix with KC master? Do you cook it or just mix it up?

To an 18oz KC, about 5oz of the pepper jelly you get in stores like Wally World. Will be better if it was Texanas jelly and am going to try it soon. I just spoon it out of the jar and mix it up. Maybe it would be better if you heated it up first., but I pour it on the ribs and use Bills gloves to rub it all over the ribs.

That is exactly the type of Texanas stuff I would use. In fact, I'm going to order some. That should be really good!!!!

Well I aint done BB's but twice and I forget now how I done em. IBCA Lynn whup your haid if she catch you trying to pass those things off as spares ya know? Found out the hard way it be the curvy bone she got the antenna attuned to. Now got an old pal who does a lot of "loin backs" from Sams. That sorta like BB but from a big grown hawg as oppsed to a baby hawg. He always foil em after they have smoked up a bit. Put honey..brown sugar..more rub..and a little beer down in there with em. They ready right before all the bones fall out. When the bones pop out that is whut he calls "losing em". Now sometimes you can fit the bones back into the slots if they aint too far gone. Ribs need to be tender.

I don't like my ribs falling apart, so I just put baby backs on the pit for about 5 hours, foil them when the come off, and let them rest until it's eating time.

I ended up doing them 2-2-1... with some apple jap Texana jelly....hmmmm they were great but I still prefer spares.......more meat...
