What time would you guys put some 7# pork butts on for a 6 PM feed time ?
How many ya thinkin of? I did two in about 7 hours.

Depends if you are gonna cook it or warm it to death. If you a warmer I would put it on there yesterday..if you gonna cook it...9 hrs give a safe margin of error for cooking...give it time to rest..no stress on the cook etc.

I will do these at 225, I was just surprised at how much the plateau on my last brisket messed with my timing. 1.5 hours per lb. generally plenty of room, plus an hour or two to rest on pork butts ?

You can't screw em up! put em on at 8:00 , should be done by 4, rest em in foil for 2! WM

At that temp I would start them at 6am. That should give you plenty of room for error (resting up to 2 hours). All pits are different. My pit would probably be at 250*+ and would take 10.5 To 11 hours to cook not including the resting. If Their done early just put them in the cooler.

Mic - never have, I just make my own with some woost, horseradish, lemon, black pepper, old bay, hot pepper, celery salt .... 7:00 be there ....
