Butts finished a little early, how long you figure I can keep them wrapped up in a cooler without giving the family food poisoning ?

It depends on the cooler and air space inside. I think the rule is not to let the internal meat temp get to below 145*. If you think its going to get down to 150* you could keep it on the pit or in the oven at 175* or so. If you pre-warm the cooler it will keep several hours.

Wouldnt bother me in the least to go 12 hrs. under most conditons. Figger they be just fine. Just dont do no peeking:)

Like Ooompappy said, it depends on how packed your cooler is. If you're worried about it, you can also wrap the butts in a bunch of towels (dish or bath, depending on how much space you have) or put them on the top of the butt.

If I'm holding something for a long time, I put it in the oven at 145* (use your thermometer to confirm the temp - ovens can vary even 25* from the set point).

:lol: TexasLaw has a point if the cooler is to large it will cool faster. I like to put a clean but old bath towel on the bottom of the cooler and another old towel ontop of the wrapped meat. If ya do not want to stain the towels or the sides of the cooler you can put the meat in clean foil pans and wrap the top with foil. :wink:

Another thing is take some fire bricks wrap them in foil and throw them directly on the coals. Let them sit there for awhile, wrap them in towels, and put them in the bottom of the cooler.

I have let pork butts sit in my cooler for 3 hours and they were still to hot to handle.
