Well....the first smoke is done. I did a 10# butt, and it turned out great. I used the TexasBBQRub, wow that stuff is good. It cooked a little over 12 hours (the blade just came right out), but the temps were all over the place for the first few hours. I had to battle the rain and wind, that don't do much for the temps. The rain came down 4 times real hard (bout an hour each time). :evil:
After I talked to texas john (thanks for the help) and got the tuning plates set, the pit did great (I like my Gator). I was able to keep the temps at 225 to 250 (in the main). Is that to much swing in the temps? I used peacn wood for the first time, good stuff.
I would like to say, this forum has given me a lot of good info. I don't think I could have turned out such a good butt without first talking to some of you and reading all of your post.
The only real trouble I had was keeping the temps up in the up-right. I was reading Woodman's post, and I am glad to see I am not the only one.
Anyway....I had a good time, and the Q turned out great. Fun, is what it is all about. Keep-em smok'ne
