i am having 18 people over so I will be making 40+ abt's for snacking on. I have a wally world pepper roaster and at $5 each could easily buy more. I know some have used big skewers and used bricks to hold them up. My ? is when doing that, does the bacon stay on when you remove from the skewers?

Yes. When the bacon cooks up, it kind of forms around the pepper and hardens. You shouldn't have any problems removing the skewers. You might also try wetting the skewers before inserting them to keep them from burning (especially if you're grilling them instead of smoking them)

I am cooking them for 20 friends and relatives this weekend too. I have never cooked them before was going to try disposable aluminum pans and squers.. maybe cutting part or all the bottom of the aluminum pans.. What does the sams pepper rack look like? I am doing pork loin and ribs with the atbs as appertizers..

Welcome Motley.......I'd cook up a few more of them puppys cuz they r probalee gunna go kwick. I'd make bout 75-90 ABT's (4-5 a pp). If there r sum that don't eat their porshun........that's more fer sumbodee else. 8) (doubt there will be any left overs :lol: :wink: )
May I suggest anuther "snack" that's reel simple ta make?
Pig Candy
Buy good quality, thick-sliced bacon.
Prepare the brown sugar and cayenne pepper topping.
Arrange bacon on a broiler pan.
Cook for 20 minutes at 300-350°F.
Turn bacon, apply topping, and cook another 20-30 minutes or until done.
Prepare The Brown Sugar Topping
Place 1/2 cup of light brown sugar (packed) and 1/4 teaspoon of cayenne pepper in a bowl, mix thoroughly, and set aside.
****This small amount of cayenne will provide the slightest bit of heat; if you like more heat, use more cayenne. ....mite not taste spicy/hot when mixed..but once it iz cooked....it will come ta life! :shock: :o :)
I do mine on my smoker @ 200° fer bout an hr.- hr. an 15 mins.
I also coat both sides of tha bacon insted of doin one side at a time an havin ta flip them. Hope ya try it & like 'em......if not...pretend I didn't suggest it. :wink: :lol:

Instead of skewering the abts try running the skewers through the top of the alum pans and then resting the abts on top of the skewers.

Toothpicks hold the bacon on the peppers, the skewers run the opposite direction whick also exposes the bacon to the heat so it can cook:

Buckeye - setting japapeno halves on the grat works fine, but for the whole stuffed peppers like I do, you would lose a lot of the cheese.

Well boys & girls.....I happen ta wrap tha bacon all tha way around tha pepper.....(tha opposit of how Bob's pix show) keepin' tha cheeze (an meat of yer choice) fully covered an intacked....an not havin ta uz a toothpick ta keep tha bacon on. :wink:

Bob .. those photos look great.. Buckie.. did I get this right...do youcook the bacon first, apply the good stuff to both sides... then wrap the pepper? If this is true.. does the bacon not get rigid and break?

Naw.....I half tha peppers......core out tha seeds an sum of tha vein....stuff with creem cheeze TPJ mix (meat opshunal)...take tha bacon an wrap it round tha width of tha pepper, not tha length. This way all of tha pepper iz wrapped an tha only part of tha pepper showin iz tha ends. Creem cheeze mix an meat can't fall out. Once tha bacon iz done (not crisp)...it's time ta eat. :wink:

I got the holes started with steak knife then sharpened a wooden stick to a point, like a big pencil. Then I slowly twisted back and forth being careful not to split the foil 'till the hole fit the peppers so they would stand up. You have to support the underside with your other hand so be careful not to stab yourself. I think one of them pepper grills would be better, but in a pinch.....
